Happy Pancake Day for tomorrow! I absolutely adore pancakes all year round and need no excuse to eat them. However since itβs Pancake Day in the UK tomorrow I thought I should come up with a special pancake recipe to mark the occasion.
This year I thought that I would create something a little bit different and was swayed by the traditional crepe version of pancake rather than the American style pancakes. However, this recipe can be used to make either or, depending on your mood.
- 1 cup wholemeal spelt flour
- 1 cup unsweetened almond milk
- 1/4 cup creamed coconut
- 1 egg

Beat all of the ingredients together in a bowl. Melt some coconut oil in a frying pan and pour in a ladle full of the pancake batter. Roll the frying pan around so that the entire surface is covered. Cook on for 3 minutes on one side before flipping and cook for a further 1 minute.

Serve with your favourite fruits and toppings - enjoy!
Reduce the amount of liquid in the batter to make American style pancakes.
The creamed cococnut in these pancakes creates a wonderful soft bouncy texture in the pancakes and a fabulous flavour of course. The fact that they use wholemeal spelt flour means that they are extremely filling and will keep you well fuelled the entire morning.
Now I did mention earlier that these crepes could be made into American style pancakes β itβs as easy as reducing the amount of almond milk that you add to the mixture to produce a more thicker pancake batter. Also, these can also be made sweet or savoury. I think they would be fabulous stuffed with smoked salmon and cream cheese, yum!

Mmm yum! My hubby is very excited about pancake day – he adores the traditional sugar and lemon version crepes. These look far too healthy for him (haha) but for me, delicious!
I think I will be making crepes this year too as we always have the American style ones.
