Happy Friday lovely people, what a great week it’s been and it’s ending on a big high for me. As I mentioned in Wednesday’s post it’s been a four day week for me. Today I have the day off work to attend my graduation, I’m really excited to celebrate the conclusion of all of that hard work during my PhD.
It’s been another scorcher this week weather wise in the UK. It has been difficult to choose out fits for work when all I really want to wear is bikini or swim suit to keep cool.
OOTD: top and jeans, Zara//sandals, Primark.
Obviously a bikini would be a tad inappropriate for work, I did love this particular outfit this week though. I’ve developed a bit of a love fest for khaki green and I really like the turned up bottoms on those jeans.
Now I don’t know about you, but I need now excuse to load up the amount of green on my plate, even at breakfast.
This bowl of strawberries, Greek yoghurt, honey and mint leaves was just perfection. Adding the mint leaves really lifted this simple breakfast and added a lovely freshness. It didn’t stop there…
I pan fried some apricots and added a slice of my Lemon and Almond Cake with some Greek yoghurt and Greek basil. Another bowl of herbed up goodness! If you haven’t added herbs to your breakfasts yet then do it ASAP!
Since I was on a four day week I decided to drive to work rather getting the train and took lunch in from home.
Salads have pretty much been all I have wanted for lunches this week. This one was steamed broccoli, tomatoes, courgettes, roast chicken and some Zest pesto.
Green smoothies are never too far from my lips…
I had this one in the car on the way to work. It included a banana, spinach, pineapple, coconut water and lactose free milk.
My afternoon snack was pretty tasty yesterday. If you love coconut and chocolate then this would be right up your street!
Dinners this week have been lovely:
Chicken breast stuffed with cream cheese and wrapped in parma ham with roasted veggies.
We had lots of plantain in the cupboard that had gone really soft and needed using up fast. The only thing to make in this situation is Tatale, also known as plantain pancakes. I blended four soft pancakes with some ginger, onion, scotch bonnet pepper and flour to make the pancakes and served them with steamed broccoli and leftover roast chicken.

Love the outfit, I am definitely running out of things to wear to work in this heat given that last year there were only 2 or 3 days like this – can’t complain though. Those plaintain pancakes look so good! x
I’m trying not to complain about the weather too. I much prefer the sunshine to the freezing cold that we are accustomed to.

I love adding fresh herbs to my food they can transform a dish!
They so do! Such a simple and cheap addition can really change a dish.

I have never had plantain I don’t think- is it sweet or savoury?
I love adding mint to fruity things- my Dad crushes mint with a little sugar and sprinkles it on pineapple- that is an amazing combo.

Plaintain pancakes sound amazing, I had plaintain stuffed in pancakes before, but never as part of the batter. I love adding parsley to my green smoothies/juices.
