Happy Pancake Day!  I adore pancakes all year round and need no excuse to eat them. However since it’s Pancake Day in the UK today I thought I should come up with a special pancake recipe to mark the occasion.

Ingredients (makes 5 pancakes)

To make the chocolate protein pancakes:

2 scoops of chocolate protein powder

1 whole egg

1/3 cup of spelt flour

1/4 cup of almond milk

1/2 tsp of baking powder

To make the chocolate almond protein frosting:

2 tbsps of plain natural yoghurt

1 tsps of almond butter

1 tsp of chocolate protein powder

1 tsp of cocoa powder

To make the cherry and almond sauce (optional):

1/4 cup of frozen cherries

3 drops of almond extract

To make the pancakes beat all of the ingredients together until well combined.  The batter should have a dropping consistency when it falls off the spoon.

Heat some oil in a pan (I used coconut oil) and add tablespoon portions or more to the  hot pan.  Cook the pancakes on one side for about 3 minutes and flip them on the other side and cook for a further minute.

Mix all of the ingredients for the frosting together and spread on top of each of your pancakes to make a tower.  The cherry and almond sauce is simply in the microwave by heating the frozen cherries and almonds together for a few minutes or until the cherries have softened.
