As you know I have been making a conscious effort to get back on track this month with my healthy eating.  Eating salad all day long, as much as I adore them, isn’t my idea of fun and in my books healthy living shouldn’t be restrictive.  For me the epitome of healthy living is eating what you want when you want, cupcake recipes are always a must in my house.

I had such a craving for muffins last weekend that I busied myself in the kitchen and whipped up a healthy gluten free and refined sugar recipe, that is perfect for anyone that is ‘dieting’, wanting to get healthy or basically like me wanting to have their cake and eat it!  I love baking recipes and this is now one of my favourites.

Raspberry and Orange Muffins
A lovely gluten free and refined sugar free muffin recipe for breakfast or snacks.
Servings: 6

Ingredients
  • 250 g rice flour
  • 1 1/2 tsp baking powder
  • 25 g butter
  • 150 ml coconut oil
  • 3 tbsp honey
  • 100 g raspberries (I used frozen)
  • zest and juice of 1 orange
  • 3 eggs
  • 100 ml unsweetened almond milk
Instructions
  1. Mix to together the eggs, milk, coconut oil, butter orange juice, and honey until light and fluffy. Sieve the flour and baking powder into the wet mixture and stir until just combined. Add the raspberries and orange zest and mix well.
  2. Transfer the mixture into a 6 hole muffin tin complete with muffin cases. Bake for 30 minutes at 160 degrees or until golden on top. Enjoy.

These have served me well as snacks all last week and as a quick on- the-go breakfast with a portion of fruit.  They are great served warm with a mug of tea.

Essentially you can really play around with this recipe and get experimental with the flavourings.  I would love to add nut butters and different berries next time.

The use of rice flour results in a heavier muffin, making them perfect for breakfast as they are surprisingly filling. These aren’t very sweet, so they are great at preventing blood sugar spikes typical of normal baked goods.  If however you have a sweet tooth, you could add some extra honey.
