Probably my favourite lunch at work this week: Moroccan lamb, Thai green salad, goats cheese salad and chutney.

Happy Sunday!  I hope you’re having a lovely weekend.  It’s been very much about catching up with the family and friends this weekend, which has been great.  We had friends over on Friday evening for dinner and yesterday spent the day with Alfie’s family, today my family are coming over.  It has felt like the weekend is whizzing by, so any free time has been spent chilling out and relaxing and getting plenty of rest.  I was so tired that I ended up going to sleep at 9.30 last night, so rock and roll eh?  In fact, I’ve had a great nights sleep every night this week and feel so much better for it.

There has been some delicious eats this week, especially at work including some fabulous lunches:

This was a chicken superfood salad, vegetable tagine and cous cous that was made, as well as the lunch above by a chef brought in to cook for us at work as part of Wellness Month.  It’s been great as there has been Breakfast Club in the morning full of healthy food to start the day and the lunches,   They have even turned one of the smaller meeting rooms into a mini gym so you can get in a quick workout in at lunch, or even workout when you have a meeting,  There has been lots of standing meetings this month rather than sitting down around the table.  Everyone has really got on board with it, which has been lovely to see.

Other than a tremendous amount of green smoothies, I’ve been eating my Raspberry and Orange Muffins for quick breakfasts.  Here they are ready to go into the oven.

I also treated myself to one of my favourite salads at work the week for lunch from M&S – avocado and feta is such a wonderful combination.

I’m still conscious of being hydrated this winter and have been chugging coconut water at my desk.  It is an expensive habit to keep up, but I love the stuff at the minute.

A favourite quick and easy dinner this week has been this fantastic pork and vegetable noodle bowl.  It’s packed full of veggies and flavour, just from the ginger, garlic, honey and soya sauce, yum!  I also added a lot of coriander for some freshness.  I will definitely be making this again for sure.
