They say that food is the way to a man’s heart is through his belly – well this cake is clearly proof of that!
One bright and sunny Sunday afternoon I fancied baking Alfie a cake. He’s my biggest fan when it comes to my food, may be he’s just slightly biased, but he loves my cakes especially. I wanted to do something nice for him to show my appreciation. He’s such an amazing husband and very supportive and I thought baking a cake would be a nice touch after our Sunday lunch, which happened to be my Chinese 5 Spice Chicken Meal Idea.

I hadn’t got time to go to the shops so it was a case of relying on what I had in the cupboards already. Luckily, our larder is well endowed with baking supplies so it wasn’t too bad. Also, I found this very easy and quick recipe by James Martin online which I adapted and made my own.

- 1/3 cup clear honey
- 140 g /5oz butter
- 1/4 cup light brown sugar
- 2 whole eggs
- 100 g plain flour
- 100 g ground almonds
- 1 tsp baking powder
- 1/2 tsp baking soda
- almond slivers

Preheat the oven to 180 degrees and prepare and line a baking tin.

In a pan on a low heat melt the butter, honey and sugar until liquid. Take off the heat and pour in the flour, baking powder, baking soda and eggs - mix until just combined.

Pour the batter into the cake tin and smooth over the top. Sprinkle over the almond slivers and bake in the oven for up to an 1 hour or until golden brown on top (keep checking incase the almonds on top burn).

Once cooled serve with your favourite tea or coffee and enjoy!

I couldn’t believe how easy this cake was to whip up in an instant. Seriously once I had all of the ingredients measured out it took less than 5 minutes to mix together and get in the oven. It’s a very simple bake if you’re not too confident with desserts, but want to cook something special.
The cake has a lovely rise on it and a wonderful light texture. I think the honey and almond flavour really works here. Funnily enough Alfie hates the taste of honey, but I nervously served him a slice with fresh berries and ice cream. With my fingers crossed he tried his first bite and said that he loved it… I was so happy!

Mmm this sounds lovely- I love using ground almonds in cakes as it makes the texture so lovely and moist, and I bet the honey flavour goes so well too.

My favourite cake to have with tea…I quite like carrot cake. So moist and flavoursome and not crazy sweet. But to be honest, any cake is good!
