Chocolate Protein Brownies

They contain no butter, flour and are low in refined sugar.  Now I kid you, these are incredibly moreish, after one square you will be totally satisfied, which is one of the secrets that I have discovered when baking with protein powder. If like me and you have a certain addiction to peanut butter cups and anything that is remotely sweet and salty then I seriously consider that you try making these.  I’m not proclaiming that I’m an expert in the field of brownie baking or anything, however, I really believe that this particular recipe is a keeper.

Chocolate Brownie Dessert

Once baked and out of the oven, you will be left with these melt in your mouth squares of chocolate deliciousness.  Great served cold or warm with Greek yogurt or even ice cream if you are feeling particularly decadent – either way your belly will be so happy with you for this!

Healthier Chocolate Protein Brownies

In terms of their nutritional value, they’re grain-free, gluten-free and contain no butter, so I would say that they were healthier than most brownies out there.  I would love to see if these could be made vegan by subbing in flax eggs instead of regular hens eggs – let me know if any of you try this out! Just to make you aware, the protein brownies batter recipe doesn’t contain any refined sugar itself, but some may be found in the type of dark chocolate chips that you use. Happy baking!

Ingredients
  • 2 scoops of chocolate protein powder (60ml scoop)
  • 2 tbsps unsweetened cocoa powder
  • 3 eggs
  • 1 tsp vanilla extract
  • 2-3 tbsp peanut butter (I used Meridian crunchy peanut butter)
  • 1/2 cup almond milk
  • 1 tsp baking powder
  • dark chocolate chips for decoration
Instructions
  1. Preheat the oven to 200 degrees and prepare a brownie tin for baking.

  2. Measure out the protein powder, cocoa powder and baking powder and place in a bowl. Mix in the eggs, vanilla extract and almond milk and stir until well combined.

  3. Stir well before pouring into a prepared tin.

  4. Add dollops of peanut butter randomly to the mix and swirl with a spoon then sprinkle over some dark chocolate chips for decoration.

  5. Bake for 15-20 minutes until cooked. Allow to cool for 10 minutes before cutting - devour and enjoy!
