I will never get tired of this view.  Our huge magnolia tree sits directly outside of our bedroom window and I always like to take a few moments every day when it’s in flower to take in its beauty.  Sadly, the leaves have since sprouted since taking this picture and most of the flowers are now gone, hence why we always make such a big deal about it each spring because the flowers don’t last very long, especially in the blustery wind.

Even though, the weather has been gorgeous this week in these parts the mornings can still be chilly so I’ve enjoyed my porridge on the colder mornings.  This was plain banana porridge made with unsweetened almond milk, raspberries, sunflower seed butter and sprinkled with coconut sugar.

I’ve lapped up the green smoothies this week and can’t seem to get enough of them, they’re really on point for me at the moment.   This super creamy banana and peanut butter smoothie was the perfect snack before taking my little man for a walk. Sometimes simple is the best thing ever!

Another green smoothie, this time for breakfast that included pear, spinach, unsweetened almond milk, lucuma powder and vanilla protein powder.  This set me up for a super productive day of working and some fun in the sunshine too.

Over the past month or so, we’ve tried to make the most of everything in our fridge and larder before doing the weekly shop.  To be fair, it has led to some random meal combinations for me, but also some delicious ones like this plate of fried eggs, steamed broccoli and avocado.  I love meals like this!

This goat’s cheese and red onion omelet with mixed leaves, avocado and chilli chutney was a great midweek lunch.  I seem to be in a bit of an egg groove at the minute!

Look at that creamy almond butter!  You can’t beat a big dollop of almond butter and a chopped pink lady apple to see you through an afternoon of writing.  I will never tire of this classic combination, never.

One of my life’s loves at this time of year is being able to eat outside again.  I enjoyed this bowl of strawberries and chocolate coconut yoghurt ice cream by The Coconut Collaborative that I bought from Sainsbury’s in the sunshine.

I was super excited to see that my little blog had been featured in this months Fit and Healthy magazine.  Those Peanut Butter Cup Protein Brownies are to die for!

Well, we have a busy Sunday planned that includes making up Aiden’s nursery, which I’m really looking forward to.  I’m hoping that the sun is going to make an appearance too so that we can make the most of another family fun weekend outside in the garden and perhaps go for a long walk too.

What have you been making the most of this week?
