Bread isn’t something that we buy very often in our household and if it is it tends to be rye bread or sourdough. Since we started weaning Aiden onto solids we’ve got in a whole mixture of food that we wouldn’t really buy on a more regular basis for him to try. One of these said foods is pita bread, which I used to eat quite often a few years back, I’m not sure why I stopped. I bought it to go alongside hummus and vegetable sticks for quick and easy lunches for mummy and baby during the week.
I’m going to be honest, there are only so many times I can eat hummus and vegetable sticks for lunch, but the idea is to get the little one to eat the same as us so that he’s integrated into the family meals more. Well, one lunch time I decided to mix things up after seeing this post and with some leftover pita bread that needed using before we were due our weekly grocery shop. The result was so easy to throw together that I can’t really call this a recipe, but it’s far too tasty not to share.

- 2 wholemeal pita breads
- 2 tbsp hummus
- 1 ripe avocado
- 6 rashers of parma ham
- Pinenuts to garnish (optional)
- 3 cups peppery rocket
- 1 cup roasted butternut squash
- 3 medium sized red onions roasted
- 1/3 cup of feta

Preheat the oven at 180 degrees.

Prepare the butternut squash (diced) and red onions (quartered) and roast in the oven for 20-30 minutes until tender set aside and allow to cool.

In a bowl add the rocket and roasted vegetables and crumble in the feta cheese and stir.

Spread the hummus on top of the pita bread like butter.

Slice the avocado and place on top of the hummus and add the parma ham on top.

Sprinkle with pine nuts

Serve the loaded pitas with the salad and enjoy!
Cooking time includes the time to prepare and roast the vegetables.
You can practically throw whatever you want on top of your pita bread, I basically just used what we had left over and it worked really well. Avocado and hummus are one fantastic combination, but then add the salty parma ham…well for me, it takes it to the next level.
What I like about these is how quick and easy they are to make on a whim and the possibilities are endless. Obviously, this is a non-vegetarian example, but you can easily make it suitable by taking out the parma ham and adding more roasted vegetables or cheese. This really does make a gorgeous quick weekday lunch that is easy to throw together and healthy too.










I love pitta bread for quick and easy lunches, we always have a few in the freezer for emergency lunches too.

Scrummy! So many gorgeous flavours here – I’ve never really been a fan of pittas but I like the idea of using them as a bit of a flatbread. Parma ham is one of those things I always crave during summer months, especially for a snack type lunch – apple and parma ham, omg! Feta and squash are also a total match made in heaven! I think I’ll definitely give this a try however 🙂

Oooh this looks so yum! I haven’t had parma ham in about a million years but Aldi do some amazing stuff, I might have to nip in after work!
I love pitta bread in the morning stuffed with sliced banana, peanut butter and lots of cinnamon. Makes a really filling breakfast for when you know you might not be able to have lunch until late.
My other favourite would be stuffed with lots of salad, leftover roast chicken and a bit of mayo mixed with some fresh tarragon – delicious!
