This simple and quick salad is bursting with sunshine flavours! If you love squeaky cheese like me, then this halloumi salad has your name all over of it. The halloumi cheese is brushed with a sweet chilli sauce which sits so well with its natural saltiness. I love a sweet and salty flavour combination and this recipe has it in abundance, especially with the fresh vibrant mango adding a summery zing.
An English Summer
After a few days of stormy wet weather, it seems that summer has finally returned to the UK. I really wish that we had one long season of summer, instead of a few days of sunshine here and there. Alas, I shouldn’t complain because I’m really happy that the sun has returned for a while.
Mangoes are perfect for summer
Mangos just scream summer to me and I went slightly mad at the greengrocers at the weekend and bought a heap of them. One of my favourite ways to use them is in salads, with some tasty ingredients. The fresh sweet juicy flavour from the mango is second to none and I’m a little bit obsessed with it right now.
My Halloumi Obsession
Speaking of obsessions, I feel that this salad is just full of them, halloumi cheese is another one. I’m not sure what it is that I adore about it, but its meaty squeaky texture is delicious. Its salty flavours complement sweet fruity flavours so well and of course, in this instance sweet chilli too.
So if you’re looking for a summery recipe to try then definitely give this one a go! It would go great served with grilled fish or meat if you’re throwing a BBQ in warmer weather.

- 1/2 a mango diced
- Full fat halloumi cheese
- 1 roasted red pepper sliced
- 3 tbsps chopped coriander
- 2 large handfuls of mixed leaves
- Sweet chilli sauce

Slice and fry the halloumi cheese in a little oil and brown on each side. Brush the cheese slices with some sweet chilli sauce and set aside.

Assemble the mixed leaves, roasted red pepper, mango and coriander on a plate.

Top with the halloumi cheese and devour!









This looks nice thr only fruit I’ve had in a salad was apples but I really should try different fruits. This could be a start.
There are so many different fruits ou can try, strawberries and blueberries are also good.

This sounds amazing and the sort of thing I have been looking for in this hot weather, I would leave the mango out though as I don’t like mango and my daughter would steal it as it is her favourite fruit

Mmmm I love haloumi with fruit, we’ve had it with watermelon or roasted peaches before and it’s delicious. Mango sounds fab too.
