Potato Salad With Mustard and Dill that’s perfect to serve at your summer BBQs to accompany all that delicious food with a healthier twist to the norm.

Potato salads are a summer favourite and we enjoy them with our BBQs, salads and with any fresh summery meals really. I like to make a big batch of it and store it in the fridge so I have some to hand to help spice up even the plainest of meals. If you think potato salads are boring, well think again, because there are so many different ways that you can reinvent them.

While away in Cyprus, our hotel served an amazing potato salad that I fell in love with. I’m not sure of the exact recipe, however, I’ve given it a shot and tried to recreate my own version and think I’m pretty close. Rather than the mayonnaise that is used in most potato salad recipes, I used natural yogurt instead, which makes this a much lighter side dish. Sometimes I find potato salads too heavy and creamy, but the natural yogurt works as a great alternative and is healthier too.

The Tesco Jersey Royal New Potatoes that I used in this particular recipe are currently in season and currently available in Tesco stores nationwide. They have a natural earthy and nutty taste, which compliments the salad dressing really well. A fun fact about this variety of potato is that they can only be grown on the island of Jersey and is one of the traditional foodie signals that Spring has officially arrived.

Potato Salad With Mustard and Dill that’s perfect to serve at your summer BBQs to accompany all that delicious food with a healthier twist to the norm.
- 650 g Tesco Jersey Royal New Potatoes (halved)
- 3 tbsp Natural yoghurt
- 2 tsp Dijon mustard
- 2 tbsp fresh dill (finely chopped)
- 6 radishes (thinly sliced)
- 4 spring onions (sliced)
- salt and pepper to taste

Boil a large pan of water and cook the potatoes on a medium heat for 15-20 minutes until cooked through. Allow them to cool.

In a large bowl, mix together the natural yogurt, Dijon mustard, dill, salt, and pepper before pouring in the cooled potatoes, radishes and, spring onions.

Make sure everything is well coated with the yogurt mixture before serving.
Store in an airtight container in the fridge.

Yes! The yogurt is creamy but not too heavy.
I tried to grow Dill last year and didn’t succeed so glad I can buy it fresh here though. I need to try this I love dill on my salmon and this looks marvelous in flavors!

I love potato salad but will admit I rarely move away from just potatoes mayo and spring onions! This sounds much lighter and fresher.
I do love a good potato salad and yours looks delicious. Dill is a great herb to set off potatoes. I think I need to grow some again. If I’m going for a creamy potato salad, I usually go for half mayonnaise, half yoghurt.
