Well what a glorious weekend it’s been with the weather in the UK.  The sunshine really does make a difference, everyone I came across yesterday seemed to in the best mood.

I was at work so didn’t get to enjoy the sunshine, but I’m hoping that it lasts so I can get my dose of vitamin D.

My workouts have been pretty random this week and have basically just had to make do with the time that I had available:

Monday:  Rest, such a lazy day!

Tuesday: HIITs and random strength routine

Wednesday:  REST

Thursday: Yoga for runners podcast

Friday: HIIT and strength routine

Saturday:  REST and walking

Sunday:  Tara Stiles Slim Waist Routine and Ultimate Stretch Routine and a walk in the sunshine.

On Friday I had the day off and managed to meet Alfie on his lunch break for something to eat.   We went to a lovely deli that sells lots of gorgeous food stuff such as homemade bread, chocolate, pasta, antipasti, oils and vinegars etc.

For lunch I had a lovely and creamy white bean and Parmesan soup. I’ve never had cheese in my soup before but the Parmesan really gave the soup a lovely flavour.

I also had a Rose Lemonade with my soup, so yummy!

In the afternoon I snacked on one of these Up Raw bars that I have been sent to review.

By dinner time I wasn’t very hungry so just had some of the chilli that I had made earlier that day with grated cheese, homemade guac and two fried eggs.  It was pretty much like a chilli enchilada but without the tortilla wraps.   I love Mexican food, enchiladas being my favourite, but sometimes I can find them a bit too heavy.  This deconstructed style of enchilada really hit the spot!

For breakfast yesterday I had a huge bowl of roasted kabocha squash topped with Greek yoghurt and drippy and almond butter.  This breakfast never gets old!

It has been a while since I’ve had one of my favourite calprese salads so I made one for lunch yesterday.  It contained salad leaves, tomatoes, mozzarella, olives and a green pesto dressing, yum!

For dinner I wanted something quick so cooked a fried egg to top a baked sweet potato, stir fried some broccoli and made some plantain, which a speedy and tasty dinner.

I had a major urge for some chocolate last night so decided to have lots of plain raw chocolate with frozen cherries and organic natural yoghurt.  The frozen cherries and yoghurt really helped with my snackiness and I didn’t eat again for the rest of the evening, which I’m prone to do at the weekends.

I’m loving this weekends meals so far! I’ve not long just finished roasting a lemon and herb chicken for dinner tonight and I’m going to make some stock with the caucus.
