Hello everyone,  I hope you are all enjoying the start of your Easter holidays.  This week I have been off work which has been lovely and full of lots of restful days and things I love.

Being on holiday has meant that I wanted to have a chilled out week even in the gym.  I decided to just go with the flow this week with my workouts and just listen to my body.  I created this super quick and effective workout involving HIITs and some of my favourite strength exercises:

I’ve done this workout twice this week and loved it both times.  I didn’t take any breaks during each set, which meant that I ended up in a sweat heap afterwards. Such a great workout and in over and done with in less than an hour.

Getting back to some form of normality after literally eating Rome at the weekend has been a priority with my meals this week.

I had this lovely chocolate and blueberry green smoothie at the beginning of the week topped with almond butter and dried fruit and nuts.  Don’t get me wrong I adore my green smoothies and this was delicious but left me feeling a little bit chilly given the weather outside.  As a result there has been lots of warm breakfasts this week, which I have just been more drawn to because of the freezing weather.

My favourite warm breakfasts from this week:

This rather misshapen socca wrap stuffed with smoked bacon and fried apples tasted incredible.  I think it just needed the addition of some maple syrup to make it perfect!

Oats always warm me up on a cold morning and these Banana Whipped Protein Oats didn’t disappoint.  I made them using:

1/2 cup of oats

1 scoop of banana protein powder

1 cup of water

1/2 cup of almond milk

1 tsp of vanilla extract

1 egg

These were just fantastic topped with Nutella and almond butter and the addition of the egg at the end made them super creamy.

I finally used some of the lamb livers that I bought from the farm shop and chopped them up and added them to some lamb mince. I served it with some plantain, a sweet potato with butter and steamed broccoli.

The mince also included a scotch bonnet pepper in the tomato sauce to give it a kick.  I have to say that the lambs liver was a hit and will be buying more of it in the future.

Lamb mince in a tomato sauce makes the perfect leftovers.  I had some with some salad leaves and two fried eggs.  The yolks on the eggs were so runny, yum!  This dish reminded me a little bit of the lettuce wraps that I used to get from the takeaway.

Fried eggs seem to have been a staple this week. I had two with smoked salmon and some spinach and sundried tomatoes fried in butter. Simple but amazing!

My favourite snack this week has to be roasted kabocha squash topped with local honey comb and natural drippy peanut butter. You just cannot beat kabocha squash!

For me it has been pretty easy getting back to my regular eats.  Luckily my body seemed to craving all of the veggies and greens, probably due to the lack of them in Rome.  Do you find it easy to resume your normal eating patterns and eats after a holiday?
