Summer Strawberry & Peach Lentil Salad for a simple and quick idea for lunch, a side dish or an easy portable idea to take along to a sunny picnic. This chopped salad is full of the flavours of summer with the sweet and juicy strawberries and peaches balanced with the rustic and hearty green lentils.
Last week I took my little boy strawberry picking with his Nana and Grandad at the local pick your own to gather up some of the early summer strawberries that had ripened because of the sunny spell that we had in the UK a few weeks ago. I love that we have this just on our doorstep, one of the loveliest things about living in the countryside is the scale of the amount of fresh local produce that’s available to us. Plus, I think it’s always nice to teach little ones that your food doesn’t come in pre-wrapped packaging and show them where it actually comes from whenever possible.
We did well and picked quite a large punnet of strawberries which Aiden was eager to get home to eat with some chocolate ice cream. I think when it comes to strawberries we often think about creating something sweet with them like my No Bake Strawberry Cheesecake Parfait or Chocolate Covered Strawberry Sundae, but they are great in savoury dishes too. One way to use up our stash was to make a simple chopped summery salad with lots of fresh ingredients and it looks so pretty served in my Botanic Garden Salad Bowl.
This year would be the 100th birthday (June 6) of Susan Williams-Ellis the founder of Portmeirion pottery and the women who inspired the iconic Botanic Garden range which has been synonymous with the brand since its inception. The beautiful floral designs are perfect for serving your summer creations to any guests at BBQs and garden parties. Some of my favourite pieces from the range include the lasagne dish, oil and vinegar bottles (shown above) and, oval nesting bowls.

- 1 bag Mixed salad leaves
- 100 g strawberries (halved)
- 2 fresh peaches (chopped)
- 1 tin of green lentils (water drained)
- 1 carrot (sliced)
- 1/2 cucumber (sliced)
- salad dressing of your choice

Prepare all of the fruit and vegetables and mix together with the green lentils and salad leaves in a large bowl.

Pour over your favourite salad dressing before serving. Enjoy!

I totally agree with you! Strawberries are great in savory dishes. I also use them in salad, like you but haven’t tried adding lentils in yet. Will give it a go!
