Summer Strawberry & Peach Lentil Salad for a simple and quick idea for lunch, a side dish or an easy portable idea to take along to a sunny picnic. This chopped salad is full of the flavours of summer with the sweet and juicy strawberries and peaches balanced with the rustic and hearty green lentils.

Ingredients
  • 1 bag Mixed salad leaves
  • 100 g strawberries (halved)
  • 2 fresh peaches (chopped)
  • 1 tin of green lentils (water drained)
  • 1 carrot (sliced)
  • 1/2 cucumber (sliced)
  • salad dressing of your choice
Instructions

  1. Prepare all of the fruit and vegetables and mix together with the green lentils and salad leaves in a large bowl.

  2. Pour over your favourite salad dressing before serving. Enjoy!
