Eggs are such a staple in my house we all just love them. When we’re down to the bare essentials from that week’s weekly shop I know that as long as we’ve got eggs on standby we will be fine. They are just so versatile and work great with practically anything.
One of my favourite things to make with eggs are egg muffins. If you’re new to the egg muffin revolution then they’re basically portable omelets baked in a muffin tin that can easily be eaten on the go. It takes very little ingredients to make them taste great I think the less complicated you make them the better they taste.

- 6 large eggs
- 3 tbsps milk (I used almond milk)
- 2 tbsp dried mixed herbs
- 1 red pepper
- 1/2 cup spinach
- Melted coconut oil to grease the muffin tin
- 1/3 cup grated cheddar cheese

Preheat the oven to 180 degrees and brush some melted coconut oil around the muffin tin holes to grease them.

Prepare the red pepper and cut it into small diced pieces

Lay the red pepper and spinach in the bottom of the muffin tray.

In a bowl, beat together the eggs, milk and dried mixed herbs.

Pour the egg mixture into the muffin tray and sprinkle over the grated cheese.

Cook in the oven for 20-30 minutes, or until golden brown and the eggs have set.

Serve and enjoy!
Store in the fridge in an airtight container and they can also be frozen too.
These make the perfect on the go breakfast if you’re in a rush and a great easy lunch that can be served with salad and a baked sweet potato or whatever your heart desires. I like to eat mine slightly warm, but they are equally delicious cold too.
You can whip up a batch of these on Sunday for a quick breakfast idea for the busy working week. Eggs are packed full of healthy protein and nutrients, so they are a fantastic start to any day even for children too. Eggs always make it into my shopping basket, they’re such an all-around winning ingredient for me. There was a time when I used to be scared of them because of all the hysteria surrounding the fat in the yolk, but thankfully I now champion the addition of healthy fats in my everyday life and have seen the tremendous health benefits because of it.

I adore eggs too. Other than eggs and soldiers, which I eat most often, I think frittata is my favourite!
