The burnished colours of the leaves, darker evenings, cosy nights in, hearty stews and gorgeous knitwear are everything that I love about autumn. I think out of all of the seasons autumn is the only one where we really celebrate seasonal produce, one of which is my all-time favourite- squash.
Last week during my failed mission to Waitrose to hunt down some kabocha squash I got my hands on some Libby’s canned pumpkin- a must have for this time of year! I couldn’t resist adding it to my favourite breakfast of late, warm and creamy oats.
I do love a simple recipe and this one definitely ticks that box to make the most amazing 5 ingredient oats.
Vanilla Chai and Pumpkin Oats
½ cup of oats
3 tbsps. of pureed pumpkin
½ tsp. of vanilla extract (optional)
1 cup of brewed Vanilla Chai tea (I used Pukka Herbs)
½ cup of almond milk (or milk of your choice)
Either cook on hob or in the microwave.
On the hob place the oats, tea, pureed pumpkin and vanilla extract in to a saucepan and cook on a low heat for 6 minutes. Stir occasionally to prevent the oat mixture from sticking to the pan. When all the ingredients come together and the oats have turned creamy pour in the almond milk and stir through. Cook for a further 5 minutes and add more almond milk if the oat mixture stiffens.
Serve in a bowl and add your favourite oat toppings- mine at the moment being almonds and caramel sauce.

I have just started using different types of tea in my overnight oats but I haven’t yet found the best method. I think I shall try your recipe and just abandon the over night thing and do it in the hob in the morning!
My favourite topping at the moment is ground cinnamon mixed with raisins, I think even a little bit of orange peel mixed in might be quite nice and give a festive warming feel to it.

Caramel sauce? Deeelish! My favorite toppings were always roasted almond butter and a spoonful of chocolate pudding. Dessert for breakfast? Yes please! 😀

Yum! I saw a can of pumpkin puree at WF at the weekend but chickened out of trying it – I’m not sure I’d like it, but you and loads of other bloggers make such yummy things with it!

That looks lovely- how do you cook it in the microwave with the tea? Do you make the tea first and then add it as the liquid? Just wondered as I love the idea of tea infused porridge but only make mine in the microwave.
Yes exactly that way- brew the tea first and add it to the oats as the liquid! 🙂
Yum, pumpkin oats are my favourite. I’m loving either them, or mince pie filling oats right now. Always topped with chia seeds and cinnamon!
