When it comes to food, nothing reminds me more of the autumn than maple syrup and the smell of cinnamon. I’m a big fan of both flavours, but only seem to have them regularly in the colder months. There is something quite warming about the smell of cinnamon and let’s face it maple syrup pretty much tastes great on any autumn related food…squash anyone?
One of my favourite autumnal breakfasts is porridge made with almond milk and drizzled with maple syrup and topped with cinnamon and pecans. I think I always opt for porridge in the autumn because it’s not only very nutritious, but it always leaves my belly feeling all warm inside, a bit like an internal water bottle.

My breakfast vice would have to be granola. It’s so darn addictive that if there is a box in the house I have to hide it at the back of the cupboard in the hope that I forget about it…erm…this rarely happens. I can eat a whole box within a week if given the choice and I’m always wary of the high sugar content of some brands. With that said I do like to make my own granola and in the past have made Cherry Bakewell Granola, Orange and Chia Seed Granola and more recently my Salted Peanut Butter Granola. Now that autumn is well on its way I thought it was about time that I made another batch of granola that featured some of my favourite ingredients from the season.

- 3 cups rolled oats
- 1/2 cup maple syrup
- 1/2 cup coconut oil
- 1/2 tbsp cinnamon
- 1/4 cup pecans

Preheat the oven to 150 degrees.

Melt the coconut oil with the maple syrup together in the microwave or on the hob and stir to combine. Add the liquid mixture and cinnamon to the oats and stir through so that all the oats are covered.

Bake for 10-15 minutes or until golden brown and allow to cool on the side. Once completely cool add in the pecan nuts and store in a air-tight container.
The kitchen smelled amazing when this was baking and I couldn’t wait to give it a taste test. I’ve stored mine in an air-tight kilner jar and it should easily keep for a couple of weeks. All of the healthy fats from the coconut oil and pecans mean that this is going to be great for snacking on when I’m nursing my little man – if it lasts that long! Those healthy fats are great for your skin and extremely nourishing for your body.

In my usual style I’ve hidden the jar away to save me from myself. I did sprinkle some on my yoghurt and fruit the other day and was really proud that I showed some restraint, although I’m not sure how long my good behaviour is going to last. Happy baking!

I agree, cinnamon and maple are very autumnal. I made a spiced apple cake at the weekend, and you had to cook the apples first with cardamon, star anise, nutmeg and cinnamon- it smelled amazing!
Oh that sounds amazing! My next door neighbour has given me a couple of slices of her apple and cinnamon cake, cannot wait to have some with a cup tea.
I love granola (along with pancakes) and for me autumn is about cinnamon, butternut squash, pumpkins, soups and all things Sierra Leone.
They all sound perfectly autumnal. π

That looks so good! But I can’t eat pecans since I had an anaphylactic reaction to a tree nut. π I do agave nectar and peanut butter.

I love the idea of making my own granola, that way I can control the sugar and fat content, I have never thought about doing that, but your photos look so delicious, I might have to give it a try!
That’s one of the reasons that I love to make my own, for the nutritional control that you have.

I love the simplicity and comforting sense of this recipe, between the nutty pecans and aromatic cinnamon. I could easily see this becoming a snack staple… perhaps on top of a bowl of freshly-made, steaming-hot chunky applesauce. :9
