Sprouts are not everyone’s best friend.  Childhood memories take me back to over boiled and water logged sprouts that went mushy at first bite.  I used to dread them on my plate at Christmas lunch, but now as soon as they come into season I’m all over them like a rash.

I’m not sure why sprouts are always given a hard time and banished to only appear in households on Christmas Day.  This little recipe for a warm festive salad with sprouts playing a starring role will have you falling head over heels.

A wonderful recipe to spice up your sprouts on Christmas day!

Ingredients
  • 300 g of green lentils drained
  • 400 g of Brussels sprouts
  • Seeds of 1 pomegranate
  • Hand full of pistachio nuts
For the dressing
  • 2 tbsp of tahini
  • 2 tsp of apple cider vinegar
  • 2 tsp of honey
  • 1/2 a clove of grated garlic
  • 1/4 tsp of dried chilli flakes
  • seasonings
  • enough water to achieve desired consistency
Instructions
  1. Take the brussel sprouts and cut them into halves, turning them onto their now flat side, shred with a knife. Place the shredded sprouts into a microwaveable bowl and add a splash of water. Cover the bowl with cling film and steam in the microwave for 2 minutes until softened.
  2. Once cooked place the sprouts into a bowl and add the precooked lentils - the heat from the sprouts will warm the lentils.Add the pomegranate seeds and pistachio nuts and mix through. To make the optional dressing mix all of the ingredients together and pour over the salad and serve with whatever you fancy. Enjoy!

I’m not lying when I say how good this salad is.  It can be served hot or cold and can also be made raw by not steaming the sprouts and omitting the lentils for raw kale or spinach.

Served as a side with your Christmas meal, as a salad with chicken and hummus or with even crumbled goat’s cheese – there are no boundaries for this salad.  The ruby red pomegranate seeds make it look so pretty and Christmassy, which will brighten up any plates at the dinner table.
