Pear & Ginger Breakfast Parfait – a wonderful way to kick start your day. A homemade pear puree that is spiked with fresh ginger is layered with goat’s yogurt and granola for breakfast that tastes like dessert.
If you’re in a breakfast rut and looking for something different to try that requires little effort, then this breakfast parfait maybe just for you. Not only is it a delicious breakfast option, but because it’s a parfait it feels a bit like dessert, which can only be a good thing in my opinion. Pears are currently in season here in the UK and they’re one of my favourite fruits and makes a nice alternative to apples, which I naturally go to when looking for fruit to snack on. I love finding new ways to use them and discovering different flavours to combine them with. Cinnamon feels like a natural choice now that it’s autumn, but ginger is another flavour that works really well. You get that warming flavour like cinnamon and also a little fiery heat that offsets the sweetness of the pears.
Right now, granola is a big hit and I could eat it all the time. It’s so easy to make up a big batch like my Peanut Butter Granola and something quick to have on hand on a busy morning. I normally serve my granola with milk and chopped fruit or make a big yogurt bowl with berries. Serving it as part of a parfait feels more decadent and if you were to make this to your family I’m pretty sure they would think you’d gone to a lot of effort when really you haven’t.
Rather than using yogurt made using cow’s milk that can be difficult to digest for some, I used goat’s yogurt from St Helen’s Farm. I’ve been replacing my usual dairy products with goats’ milk alternatives, which are great to use in cooking and baking as well as on their own. I will blog about how I’m getting on in a future post as goat derived products can support gut health and wellbeing.

- 6 tbsp St Helen's Farm Goats Milk Yogurt
- 6 small pears
- 2 tbsp water
- 1 tbsp fresh ginger
- 1 tsp cinanmon
- 1 tbsp maple syrup
- handful of Peanut Butter Granola

To make the pear puree, peel and core the pears and cut them into chunks. Add them to a saucepan with the water, cinnamon, fresh ginger and maple syrup.

On a low heat cook the pears until they start to break down and form a puree (should roughly take 15 minutes).

Next, in a jar or glass, pour some of the granola into the bottom before topping with some of the goat's yogurt. Layer with the pear and ginger puree and repeat until the jar/glass is full.
