There are some flavour combinations that just belong together: cherries and chocolate, blueberries and lemon, peanut butter and chocolate. Well how about peanut butter, chocolate and banana bread? Seriously it works and I’m a little bit in love with it!
When my brother visited a few weekends ago now, we made a big loaf of banana bread. My kitchen smelt divine! We couldn’t stop eating it and kept going back for more, even when it was fresh out of the oven. Luckily, our eyes weren’t too much bigger than our bellies and there was plenty left to take home with him…sharing is caring after all!
I knew that I wanted to make banana bread again at some point, but wanted something completely different from the loaf that we had made previously. After looking at my store cupboard ingredients and researching some recipes I came up with these tasty morsels.

- 1 cup wholemeal spelt flour
- 1/2 cup ground almonds
- 1/2 cup natural yoghurt
- 2 over ripe mashed bananas
- 1/3 cup peanut butter
- 1/4 cup honey or agave nectar
- 1/3 cup coconut butter
- 1/3 cup milk or dark chocolate chips
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda

Preheat the oven to 180 degrees and prepare a mini muffin tin.

Beat together all of the wet ingredients (peanut butter, yoghurt, vanilla extract, coconut oil, mashed bananas and honey) in a mixer or by hand until well combined. Pour in the ground almonds, spelt flour, baking powder and baking soda and mix in well. Add in the chocolate chips, making sure that they are well distributed.

Next portion out the batter into mini muffin trays and bake for 10-15 minutes at 180 degrees.
This recipe yields 30 mini muffins, but you can easily get 6-10 larger muffins from this muffin mix.

The best thing about these, other than being totally scrummy, is that they’re very quick to whip together and bake. On a day when you have a sweet craving and want to bake something quickly, these are just perfect. Of course, I’ve attempted to make these as a bit healthier alternative to conventional banana bread recipes by omitting the butter and using coconut oil. I also used wholemeal spelt flour, which give the muffins some density in their texture.
You can really go to town with the additional ingredients too. I would love to try some raisins and cinnamon with the peanut butter. Even adding some cocoa powder to the batter would work, making them even more chocolatey and indulgent.


As the recipe notes suggest, if you wanted to make the batter into larger traditional muffins as opposed to these cute mini muffins, I think you can easily get 6-10 larger muffins from this mix; perfect for on-the-go breakfasts or snacks. When they came out of the oven I taste tested a couple…or 3 or 4…ahem! Cook’s perks and all that jazz. I warn you now they are seriously addictive, but worth it and there’s no real effort required. I absolutely peanut butter and banana combo . As a student i lived on PB and banana on toasted rye bread. I have to control of PB eating as it can get out of hand!!:) I . add a touch of cinnamon to PB and banana combo too for added flavour and warmth
I just had PB on sour dough toast with banana, so yummy! Peanut butter is very addictive though. π
Peanut butter and chocolate is a great combination, but peanut butter goes with everything. These look very good.

I’m a big fan of Banana bread/cakes, it’s a great way of using the over ripe bananas, i also if i remember is chop and freeze bananas to use for recipes in the future. This looks like a great recipe and one that kids would enjoy too…pinning for future reference!
I always end up with over ripe bananas so making thing like this is a bonus really. Freezing them is a genius idea!

Mint and chocolate is equally as good and it’s actually quite refreshing in some ways especially if it’s been in the fridge. π

These look very good! I always have to use soy butter instead of peanut butter because my daughter is allergic, but I’ve found that it still tastes the same in recipes. She would probably love these.

I love banana bread- my favourite it either with cinnamon, or dark chocolate chunks. Coconut works well too if you fancy a tropical version.
