An easy deliciously addictive mini muffin recipe, incorpating some of my favourite ingredients.

Ingredients
1cupwholemeal spelt flour
1/2cupground almonds
1/2cupnatural yoghurt
2over ripe mashed bananas
1/3cuppeanut butter
1/4cuphoney or agave nectar
1/3cupcoconut butter
1/3cupmilk or dark chocolate chips
1tspvanilla extract
1tspbaking powder
1/2tspbaking soda
Instructions
Preheat the oven to 180 degrees and prepare a mini muffin tin.
Beat together all of the wet ingredients (peanut butter, yoghurt, vanilla extract, coconut oil, mashed bananas and honey) in a mixer or by hand until well combined. Pour in the ground almonds, spelt flour, baking powder and baking soda and mix in well. Add in the chocolate chips, making sure that they are well distributed.
Next portion out the batter into mini muffin trays and bake for 10-15 minutes at 180 degrees.
Recipe Notes
This recipe yields 30 mini muffins, but you can easily get 6-10 larger muffins from this muffin mix.
