So I thought I would give you a little peek at some of the types of recipes that you can expect from my new recipe e-book, mainly because the month has run away with me and I know it won’t be ready in time for the end of the month like I had hoped. I know you are going to love it and it’s full of lots of brand new fuss free snack recipes and some of my favourites that have appeared on the blog. I’ve experimented with matcha green tea a lot recently, especially in cooking and baking. It’s one of those up and coming superfood powders that has been around for a while, but is becoming increasingly popular on the healthy living scene.

- 1/2 cup cashew nuts
- 1/2 cup desiccated coconut
- Juice and zest of 1 lemon
- 1-2 tbsp maple syrup
- 1 tsp matcha green tea powder (I used TeaPigs)
- 1/2 tbsp coconut oil

Put all of the ingredients into a food processor and blend until smooth or a crumb mixture forms.

Take teaspoon portions of the mixture and roll into small balls.

Roll the energy balls in some desiccated coconut to cover.

Leave in the fridge for 30-40 minutes to firm up.

Make yourself a cup of tea and enjoy your new healthy and tasty match tea snack balls.
These are best stored in the fridge in an air-tight container.
So what is matcha tea? It’s actually just powdered green tea in its purest form. Believe it or not, one serving of matcha green tea contains 137 more antioxidants than a cup of green tea made using a tea bag. When you consume matcha green tea you are drinking, or in this case eating, the whole green tea leaf and nothing else, so you are getting the entire nutritional benefits of green tea.
It’s brimming with anti-oxidants to help fight off nasty free radicals and enhance the bodies inner wellbeing, contains lots of vitamins and minerals, lowers cholesterol and blood sugar and boosts metabolism. An added benefit of matcha is that it also heightens your concentration levels due to the presence an amino acid called L-theanine, which is naturally found in green tea.
Drinking shots of matcha is great and I love matcha green tea lattes made with almond milk too. This is a lovely alternative way to get your matcha hit. I’ve been working on a matcha cupcake recipe, but it still needs some tweaking before I can share it with you all.









You know, I’ve never got round to trying Matcha Tea. From what I’ve heard, it’s a much more pungent version of green tea and very earthy and grassy. I do love the vivid green colour though, it just looks like healthiest little energy ball in the land! I love how this recipe doesn’t require dates or any other dried fruit. As much as I love energy balls, and my own recipes too, in all honesty I’m not the biggest fan of dried fruit due to their high sugar content (other nutritional benefits aside) that so many recipes require. So these certainly look like something I’d be keen to make, and a good way to try matcha!

It is hard to make energy balls without dried fruit isn’t it because they just work so well. Matcha is very pungent, but if used the right way it can be really yummy! 🙂
I have been playing around with energy balls but not yet thought about adding matcha powder to it.

Oooh these look fab. I’m not a fan of drinking green tea as it makes me feel so sick so perhaps eating it instead would be better!
It does sound like a strange concept, eating green tea! I like it both ways, but matcha has a totally different taste to a cup of brewed green tea.

2 weeks ago I feel like I’ve never heard of matcha, but it is everywhere now haha. I love green tea (though I usually stick to iced) so these would totally be up my alley.

Yum! These are very similar to a recipe I posted earlier in the year- the combo of cashews, lemon and matcha is sooooo good!
They’re just so tasty! I think the lemon really brings out the flavour of the matcha, so good! 🙂
I am not big on matcha maybe because I have not incorporated them into my diet so might need to try these instead. They look so delicious.

I love matcha! Usually I just steam up some coconut milk and add matcha for a yummy breakfast drink!

I have been drinking powered green tea for years and never once thought that I could use it in baked goods!
Surprisingly, you can use it for so many different things! Sounds like you have been really enjoying drinking matcha for so long now.
The lemon with the matcha is such a good combo- Lauren posted a similar recipe earlier this year and I made them- they were fab.
I didn’t like matcha with water particularly, but I liked it with almond milk.
I’m not really a big fan with it with water either as it tastes really earthy, but I do like it with almond milk. The lemon with matcha really works doesn’t it, so yummy! 🙂
