Now you know that I love my low carb options, especially when it comes to pasta and the same can be said for pizza and bread too. This isn’t all the time, by the way, sometimes a girl needs some carb loving, but there are also times when I want to enjoy all the delicious goodness of carb based dishes without the heavy food baby at the end of the meal.
I do enjoy a pizza party on a Friday night and while that doughy yumminess is comforting and tasty, I’ve delved into the world of alternative pizza bases made with vegetables. Cauliflower and courgette pizza crusts are great, but they can be a little messy with all that grating and the massive clean up operation afterwards does put me off a bit.

- 1 aubergine eggplant
- 1 jar passata you will only need a few table spoons
- 100 g mozzarella cheese
- Handful of fresh basil
- Dried oregano

Preheat the oven to 200 degrees.

Slice the aubergine into 1cm thick pieces, brush with a little oil and place on a baking sheet. Bake for 15-20 minutes, until tender.

Once cooked through, spread some of the passata on top of the aubergine slices, following with the mozzarella, basil leaves and a sprinkling of dried oregano.

Return the baking tray to the oven for a further 5 minutes, until the mozzarella has completely melted.

Serve and enjoy!
Aubergine (eggplant) makes an easy budget-friendly pizza base option that keeps the faff and cleaning up to a bare minimum. The naturally meaty texture of sliced aubergines makes them a perfect lighter low carb alternative to a traditional pizza dough and you can go as mad with the toppings as you want or like me, keep it simple.
Actually, the simplicity of my toppings derives from a conversation that I had with a guy at an event where I gave a talk who was lucky enough to have both French and Italian origins – how lucky is he? Two of my favourite cuisines and we talked at length about how beautifully simple they both were, yet out of this world delicious too.
This low carb pizza is made from only 5 ingredients, which not only makes it a quick and easy lunch or dinner idea, it’s easy on the shopping budget too. Think rich tomatoey sauce, gooey melting mozzarella, fragrant basil and baked aubergine which soaks up each flavour.










Clever idea! Unfortunately I’m not a fan of aubergine but I’m thinking that this could work with slices of those big marrows that are in the shops at the moment.
Ohh, I bet marrows would be lovely baked and used in this way.

You could perhaps try courgette (zuchinni), sweet potato or marrow instead.

It’s a good idea to pack more veggies in. I had seen Danni (Hungry Healthy Happy) do this with courgette before- I saw her recipe and thought it sounded like a faff, making up a base with courgette, thinking it would need shredding and mixing with egg or whatever, and I was very impressed when I saw she had made them just by slicing courgettes and using that as the base.
Oh no, it’s so easy just to slice them up. I need to try it with courgettes too, yum! I think you’re thinking of the other type of courgette pizza bases which can be a faff like you say.
