Potatoes are a shopping staples in lots of family homes, you can mash, roast, bake and fry them and add them to so many different meals to help bulk them out. They’re just so versatile that you can pretty much make them a part of every meal. Hassleback potatoes are a simple and very easy way to try something different with them and when loaded with mint and feta cheese it gives them lots of flavour and freshness.
The humble potato has been given a bit of a bad reputation as being perceived as unhealthy and carb-tastic, but I believe that they do have a place as part of a balanced lifestyle, plus their really delicious.

- One bag of Tesco Cypriot New Potatoes
- Crumbled feta cheese for sprinkling
- Chopped fresh mint for sprinkling
- Extra virgin olive oil for drizzling

Preheat the oven to 200 degrees.

Place the potatoes one at a time on a tablespoon and slice along the whole length.

Put the potatoes in an ovenproof dish and drizzle with rapeseed oil (or a cooking oil of your choice). Bake for 30-40 minutes.

Serve, sprinkled with the crumbled feta, fresh mint and a drizzle of extra virgin olive oil.
Recently, we’ve been enjoying these Cypriot New Potatoes from Tesco. These particular new potatoes are in season only until March, so we’ve been making sure that we’re making the most of them while they’re about. They can be boiled or steamed, but I like them served this way as the skin browns on the outside a little and the centres are all fluffy.
Food at this time of year can be quite heavy, so these made a nice change. Adding the feta cheese and the fresh mint really gives the potatoes a lift and actually makes them quite summery.
