Who’s excited for Pancake Day? Not that I ever need an excuse to eat pancakes (well, actually waffles have been my thing of late!), but I couldn’t let Pancake Day pass me by without blogging a pancake recipe, this one is gluten free too!. My preferred style of pancake for breakfast are the American variety, crepes always feel too much like dessert to me. Warm and fluffy insides and adorned with all of my favourite toppings, yum!
Some of you may think that it’s a faff to make your own pancakes, but they’re so easy! And yes, I could go to the shops and buy those perfectly round and golden brown pancakes in a packet, but I like the fact that my pancakes are rough around the edges – random sizes, not quite round and varying levels of light and darkness. It’s all part of the fun that is Pancake Day!
To make these pancakes gluten free, I’ve used buckwheat flour and gluten free baking powder. The buckwheat adds a lovely nutty flavour that really complements the banana bread flavours. These are like breakfast for dessert, so you can see why I love them so much.

- 2 cups buckwheat flour
- 1.5 tsp gluten free baking powder
- 2 tsp cinnamon
- 1 mashed banana
- 2 eggs
- 1 cup almond milk
-
Mash the banana and add to a bowl with all the dry ingredients, stir together.
-
Crack in the eggs and pour in the almond milk. Beat together until smooth.
-
In a pan, heat a little oil and pour in ladle sized portions of the batter.
-
When bubbles appear on the top on the pancakes it's time to turn them on the other side to cook for a further 2 minutes. Repeat until all the batter is used up.
-
Top with your favourite toppings and enjoy!
I’m pretty sure that one of these ended up as big as my head! I did get pretty carried away – you can easily get 6-8 pancakes out of these depending on if you like small petite pancakes or massive monsters like me. These are super fluffy on the inside and the buckwheat flour adds a lovely nutty flavour that works well with the cinnamon and banana.
You can easily use this basic recipe to make so many different variations of pancakes – experiment and go wild! Blueberry and vanilla pancakes are on my list to try as well as adding a chocolate twist in some way. There are so many combinations that you could come up with that there seriously needs to be pancake week, not a Pancake Day!

They look delicious, not a massive pancake fan as they are very heavy so these are a nice alternative.
Thanks Naomi, these are lovely and fluffy rather than heavy.
These look simply delicious I would love to recreate this at home but sadly I don’t think my attempt would be Instagram worthy!
These look delicious! I posted my own pancake recipe today. I love banana pancakes! Xx
Ohh yummy! Will have to pop on over and take a look. ?
Must admit I prefer a French crepe as they always feel like such a treat! That said wouldn’t say no to a big plate of these right now!
Janie x
Thanks Janie! Crepes are yummy too. I love them filled with strawberries and Nutella.
Haha, I think I prefer the crepe version because it feels like dessert for breakfast 😉
These sound delicious too though.
Ha! I’d never thought about it like that…I ended up with crepes today, but think I’ll be having the American ones at the weekend. ?
Pancake Day is literally one of the best days of the year!! These are so gorgeous and I’m sure incredibly yummy too 🙂
It’s fab isn’t it, love it!
These look so awesome and I love how they’re gluten free! Pinning!
Thanks Jessy, I’m a big fan of them.
These look SO delicious that even someone eating gluten free wouldn’t feel deprived! 🙂
That’s what I was hoping for Keery, thank you!
Woah I had no idea it was Shrove Tuesday tomorrow! It’s come around so quickly! I’m actually not a huge pancake fan (especially the thin crepe-like ones we make in Britain…). I quite like the American chunky ones but to be honest I can give or take them! I like to have them when I’m in the US for the novelty factor. These look great though – lovely and fluffy!
Thanks Anna! I’ve had pancakes in the US and they ended up as big as my face. I had to take them away into a doggy bag. ?
I completely forgot it was pancake day tomorrow! It’s nice to see people sharing ideas for people with a gluten free diet
I agree! So nice to see that everyone can enjoy delicious pancakes. ?
These look SO good! I never knew you could make pancakes like this, they sound delicious. Kaz x
Thanks Kaz!!! ?
Oh these look sooo yummy! I love shrove Tuesday, always remember it as a child and my Mum making big batches of pancakes!
Same here! It felt like my mum was in the kitchen for hours cooking for me and my brother.
this look like a yummy alternative to try for pancake day! love your food styling btw!
Thanks Rebecca. I’m on a mission to improve my food photography so glad that it’s coming through on the blog. ?
Wow, these look delicious. What a fab alternative to normal pancakes. And gorgeous photos too!
Thanks lovely! ?
They look fab! We are delaying our pancake day for a week as I have such a busy week this week – next week we can take our time.
I like both styles, but the thick ones are easier to cook and flip!
That’s so true! I always end up tearing crepes. The thicker ones are much more robust for my heavy hands. ?
Those look so good! We had pancakes for breakfast of course it being Shrove Tuesday (although we have them other times of the year too!) but I think I might make some like yours later when my children get home from school!
We LOVE buckwheat banana bread pancakes too! So yummy!
Of all the banana based pancake recipes I’ve seen over the last couple days these look the best!
These sound so delicious I will definitely be giving these a try for a special sunday breakfast treat. Thanks for sharing the recipe and method/
These look amazing! I’ve been loving all the pancake blog posts this week! x
