Hey hey lovely people and happy Friday! So we have made it through another week. I’m so happy that we have can extended weekend upon us in the UK, meaning more weekend full for all. We had some sad news during the week so I’m glad that it’s drawing to a close.
The nights are drawing in and the air has felt a little more crisper lately. One of my staple foods in the cooler months is warm oats. Ahhh…it has been so long! I had almost forgotten how much I loved these bad boys.
One morning this week I made some super creamy vanilla eggy oats. I made the oats as per in the microwave with water, unsweetened almond milk and a dash of vanilla extract. When the oats were nearly cooked I whisked in a whole egg and put them back in the microwave for a few minutes to cook the egg. These are seriously incredible and I love that you get a protein hit from the egg. I beg you to try these, you won’t regret it!
It has been smoothie mad around these parts this week. I’ve had one for breakfast everyday, mainly because they are quick to make and I can drink them on the go.
This banana and strawberry smoothie made with coconut water was incredible, yum!
Also, this simple green smoothie with a cinnamon and raisin bagel topped with almond butter and strawberries was like a eating a piece of heaven.
I love me some sushi and luckily so do my work colleagues as we ended up in the Hare and Tortoise for our team lunch yesterday.
Edamame beans, prawn and chive gyoza and a salmon sushi box
The salmon hand roll was so pretty, it was a shame to eat it but it went down a treat. I love our work lunches I always know that there will be scrumptious food and equally good company.
Plantain pancakes with fried eggs and tomato sauce served as a speedy mid week meal:
Plantain pancakes never get old!
I’ve also been enjoying fresh strawberries with these organic superfood clusters by Joules for dessert:
The superfood clusters came in my Nutribox this month and Iโm a big fan already.ย Dates, linseed, almonds and pistachios enveloped in 74% dark chocolateโฆhell yeah!
Despite their being reports of a heat wave this weekend it has felt a little cooler, especially in the evenings. Ideally hope that summer isn’t ready to say goodbye yet, but Iโm quite looking forward to stuffing my face with roasted kabocha again.
Do you have a favourite season? What are you looking most looking forward to when autumn eventually arrives?
What are you getting up to this weekend?

I love summer for BBQs, salads, and eating outside – but there’s something so nice about sitting in a cosy pub in winter having a roast!
Winter is such a cosy month isn’t it.
I just tried making oats with egg whites in it and the oats didnt soften. I did it on the stove top and was JUST wondering if i can do it in the microwave! Perfect timing to see this ๐ I’ll give it a try. Thanks

I always cook my oats all the way through then add the egg. I hope they turned out ok. ๐
What is the amount of oats, liquid and egg?
Yummy those clusters sound fab! Hope you have a fab weekend ๐
They are! Have a lovely bank holiday! ๐
I’ve seen eggy oats before but not been too sure of them, but I don’t know why as I love eggs, I should really try it out!
You so should, they’re great!
Adding egg whites to oats is seriously one of my favourite things. I love how much fluffier it makes them, and the extra protein isn’t anything to scoff at either. And I’m with you on looking forward to fall. The food, the fashion, the gorgeous colours… what’s not to love ๐
Fall is a beautiful season. I love all of the colours that the leaves make.
I love autumn, bright dry days when it’s crisp- love that! I always add protein powder to my oats as it makes them lovely and thick and much more filling. I am visiting home in Cardiff this weekend, so a nice chilled relaxing weekend ahead. Have a good one!
I hope you are enjoying being home.
I’m looking forward to cooler runs! Jeeze the heat sucks my energy so much!
Love the sound of those oats. I’ve heard of adding egg whites but never a whole egg. Sounds quite intriguing!
The egg makes them so much more creamier and why waste the yummy yolk ๐
I love egg white oats – it makes them so much fluffier. I am definitely a summer person so have been loving all the strawberries and raspberries in the shops at the moment. x
I’m going to miss all of the fresh summer berries.
Oh wow, that sushi looks absolutely amazing. I have yet to see a proper sushi place like that here (we mostly have takeaway places). And those superfood clusters look great.
I love sushi, they get so creative with the presentation ๐
