Had a hard week at work and looking forward to kicking back this weekend? On a Friday night, there is nothing better than cooking up a feast in the kitchen to welcome in the weekend. I’m on a bit of a budget blitz at the moment, so ordering a takeaway is not high on my to-do list. Good for me that I adore experimenting in the kitchen and after years of practice can conjure up something budget friendly and healthier at home.
A takeaway on a Friday night goes perfectly with a bottle of your favourite tipple, they tend to go hand in hand in my opinion. I’m not the biggest drinker these days, let alone a beer drinker, but a beer that I can handle and actually enjoy is Corona. Something that I never knew existed is Corona Light. The fantastic people over at Skinny Booze kindly sent me a pack of Corona Light to try. Fear not, it still tastes exactly like the original version that we all know and love, but just has fewer calories.
If you’re looking to enjoy alcohol as part of your healthy lifestyle then Skinny Booze is the website for you. They’re the only retailers in the UK that stock Corona Light and they have a vast number of other healthier alcoholic beverages too like wine, champagne and spirits.

- 500 g white fish fillets , diced (any of your choice)
- 1 pack of stir fry vegetable mix
- 3 tbsp red curry paste
- 1 can of full fat coconut milk
- 1 pack of ready to wok noodles (enough to feed 4)
- Sesame seeds and coriander to garnish (optional)

In a wok or large frying pan, add a tablespoon of coconut milk and heat for a few minutes before adding the curry paste. Cook for a further 2 minutes.

Pour in the vegetables and coat in the curry paste. Stir in the coconut milk and simmer on a low heat for 5 minutes.

Next add the fish to the pan, which should cook quickly from the heat of the sauce - approximately 10 minutes.

Stir in the noodles according to the packet instructions.

Serve and enjoy your Friday night in!

Now this recipe couldn’t be any simpler and is ready in 20 minutes or less. I think people tend to look down on packaged convenience foods, and yes, some aren’t great, however, the one’s I’ve used in this recipe make up a delicious healthy meal. Pre-packaged stir fry mixes are so handy to keep in the fridge for quick and easy weeknight meals. After a long hard week, the last thing you want to do is spend a long time in the kitchen, so a quick and healthy recipe like this is ideal.
Fish not your bag? Swap it out for another meat or a vegetarian alternative like tofu or, even more, veggies. The coconut milk in this recipe really gives it a Thai feel, which I love and the red curry paste that gives a little heat that’s not overpowering. Depending on how large you like your portions you should be able to get 3-4 servings out of this, but in our house it’s more likely to be around two!

I don’t eat fish, but I’d replace it with chicken and that meal would be right up my street nom! I might look into Corona Light this summer when I’m allowed to drink again but want to lose my pregnancy weight xx

Sounds amazing. I’ve fallen out of love with takeaways and would much rather try this instead. On the corona note have you tried coronaritas? Google the recipe at bubba gumps restaurant, it sounds strange but is amazing.

We nearly always have a selection of Thai curry pastes in our fridge, usually Mae Ploy, so this is a good reminder to use them for noodle bowls and not just for regular curries!
They work great in noodle bowls too, which makes a nice alternative to curries.

This sounds delicious, as I am a vegetarian what would you consider as a replacement for the fish? I love the coconut sauce!
You could easily substitute the meat for tofu, tempeh or seitan or add more meaty veggies like aubergine and mushrooms. 🙂
We usually have coconut with chicken, but never thought about having with fish before. It has now been added to our ‘to-try’ list! 🙂
