Love berries and citrus flavours together? Me too, and I have the perfect recipe for you today – even better if you love breakfast too because I have another waffle recipe for you. Since posting my Cinnamon Maple Sweet Potato Waffles recipe, I’ve tried out different variations and this one is one of my favourites.
Waffles have become the new pancakes in our house and they make the most wonderful weekend breakfast. Unlike pancakes, the waffle iron does all the work for you making them the perfect lazy breakfast, other than making the batter and filling your belly you don’t have to do anything!

- 2 cups wholemeal self-raising flour (240g)
- 2 eggs
- 2 cups almond milk (480 ml)
- 2 tbsps maple syrup
- 1/4 cup vegetable oil (60 ml)
- 1/2 cup blueberries (50g)
- zest of 1 lemon
-
Set up your waffle maker as per the manufacturer's instructions (I used the Belgian waffle setting).
-
Stir all the dry ingredients together in a bowl and then beat in the maple syrup, almond milk, coconut oil and eggs until smooth.
-
When ready, pour the batter into the the waffle maker and cook.
-
Serve with your favourite toppings including more maple syrup and enjoy!
9 SMART POINTS PER WAFFLE.
Oh, the whole berry and citrus thing is a complete obsession of mine. I really like how the lemon zest brings out the flavours of the blueberries, which tends to be my favourite combination. I know blueberries aren’t in season right now, but you can use frozen, or if they’re not your bag sub in something else and experiment.
I’ve developed this recipe as part of a series for Weight Watchers who are launching a brand new campaign called #WomanKind to encourage both existing members and potential members to be kind to themselves – you can read my thoughts on the campaign here. Weight Watchers have also produced a wonderful video, which perfectly highlights the issue that most women neglect the relationship with themselves.
Eating the food that I love to nourish my body without fear or restriction is just one of the ways that I practice kindness towards myself and I hope that these recipes inspire you to do the same. Healthy food doesn’t have to be boring, it should be colourful, joyous and tasty – just like these waffles!
In this recipe, I used wholemeal self-raising flour because it’s all I had in the cupboards, but you can easily make this recipe gluten-free by using alternative flour options. Also, I’m pretty sure that you could use the same recipe to make pancakes if you don’t have a waffle iron – I would love to know if this works if you give it a try!
Do you get the whole citrus and berry thing or is it just me? Waffles or pancakes?
What are your favourite ingredients to add to your waffles?

I love citrus and berries, they always complement each other so well 🙂 I am not a waffle fan though, so I would be adding them to my pancakes instead 😉
I think you could totally make pancakes with this batter, it’s certainly thick enough.

They make the perfect weekend brunch! 🙂
Oh, those look amazing!! And yes, it is true, we often forget to be kind to our bodies… I usually take care of everyone in the house, make sure they have healthy breakfast, lunchboxes and then I often skip mine till midday.
We always look after everyone else before everyone else, but I think that’s just human instinct. Definitely need to take care of yourself too, so that you can look after your loved ones even better.
Lemon and blueberries are a winner for me! Gorgeous photos xx

Interesting. I’ve had blueberry waffles before, but don’t recall ever trying lemon. Maybe the sour will wake me up better?
The lemon doesn’t actually make the waffles sour, just enhances the flavour of the berries. You should gove it a try! 🙂

I’m on a new mission for a healthier lifestyle, I want to lose weight and I’m breastfeeding so going about it the healthy way and altering the way I think about food. Definitely want to give these a try! If you have any ideas for pack lunches please send them my way!! xxx
Thanks for stopping by Kay!!! I’m still breastfeeding too and you definitely have a great approach. Nourish yourself, take your time and enjoy your baby. x
Oh these look really nice too, I have a waffle maker although find it really hard not to put too much in and make it go all over the sides! It put me off using it.
You should only need half a cup really as the batter spreads and rises.
I’ve never made waffles myself before, but these look so good! I will have to give them a go x
I hope you like them!
These look absolutely stunning! I need a waffle maker, which one do you use?
