When it comes to firing up the BBQ, for meat eaters chicken seems to feature heavily on the menu. It’s one that the whole family seems to love and it’s great for taking on different flavours, which is why it’s so popular in our house and this BBQ chipotle chicken recipe is a firm favourite.
Personally, it’s the dark chicken meat that gets my vote. I used to be swayed towards strictly chicken breasts only as it’s often promoted as the healthier choice and perhaps it is, but give me a tender succulent drumstick to dig my teeth into any day.
I always find that with chicken breasts I always run the risk of them drying out, so often opt for chicken thighs for curries and stir fries and drumsticks for the BBQ. The BBQ chipotle sauce on the chicken creates a sweet mildly spicy coating on the outside while the chicken stays lovely and moist.

Fire up the BBQ and try these sweet and sticky chicken drumsticks with a mild chipotle chilli heat.
- 8 chicken drum sticks
- 5 tbsp tomato paste or ketchup
- 3 tbsp chipotle hot sauce
- 3 cloves of garlic minced
- 3 tbsp maple syrup (leave out if using ketchup)
- 2 tbsp Worcestershire sauce
- 2 tbsp mixed dried herbs
- 1 tbsp chilli flakes (optional)
- Juice of 2 limes
- salt and pepper

Mix together all the ingredients in a bowl, except the chicken.

Pour the BBQ chipotle sauce over the chicken drumsticks, reserving some of the sauce for later.

Cook the chicken on a BBQ for roughly 15 minutes.

Brush the drumsticks with the left over sauce and cook for a further 10-15 minutes.

The drumsticks are fully cooked when the temperature reaches 74 degrees after the SuperFast Thermapen is inserted.
These can also be cooked in the oven.
BBQ food and summer flavours have been a regular go-to while the sun has been shining. To make sure that the chipotle chicken is cooked through on the BBQ I use my SuperFast Thermapen 4 thermometer and make sure that it has reached the optimum temperature of 74 degrees, totally taking the guess-work out of cooking.
The SuperFast Thermapen 4 thermometer makes BBQ cooking so easy because it has a backlit display that is able to sense different light levels, which is great when you have all that heat and smoke coming from the cooking food. One of my favourite features is the motion-sensing sleep mode, which automatically turns the thermometer on or off depending on whether it’s set down or picked up. It really is an intelligent little kitchen gadget.
This is proper sunshine food or soul food, as I like to call it. Normally I serve my BBQ chipotle chicken up with sweet potato fries, mango salsa, and a simple mixed salad. Also, you could also use the chipotle marinade on other meats and even a whole chicken roasted in the oven for a summer roast dinner.

Oh now this sounds like a delicious idea, there is something about adding some flavour to chicken that can really make it feel like a total different meal to when it’s plain.

The smokey spicy flavour of chipotle is just gorgeous. I’ve never yet cooked with it though as I’ve been unable to find any. Doesn’t give my self proclaimed “chilli fiend” status much credibility 😉
