It has felt like forever since I baked anything, which is a shame as it’s one of my favourite things to do when I have the time.  There is nothing better than spending some time in the kitchen and creating something magical.

One of my most popular recipes on the blog is my Banana Bread Chickpea Flour Muffins, which I’m rather chuffed about because I love me some banana bread.  Rather than baking an old recipe I decided to get creative with a whole new recipe and created these little tasty gems…

Banana and Coconut Mini Loaves
A healthy mini version of my favourite banana bread recipe
Servings: 5

Ingredients
  • 1 1/2 cups ground almonds
  • 3 eggs
  • 1 banana
  • 1/2 cup desiccated coconut
  • 4 tbsp honey
  • 1 tsp cinnamon
  • 1 tsp baking powder
Instructions
  1. Beat the eggs and honey together in a bowl before adding a mashed banana. Stir in the coconut, cinnamon, ground almonds and baking powder until well combined. Transfer the mixture into mini loaf trays and fill 3/4 of the way up.
  2. Bake in a pre-heated oven at 180 degrees for 20-25 minutes until golden brown. Enjoy!

Not only are these fat-free but they are also grain free.  The ground almonds act as a wonderful substitute for flour and result in a light fluffy texture.

If bananas really aren’t your bag, you could easily adapt the recipe and add your favourite berries, dark chocolate chunks, and other fillings.  I think white chocolate, coconut and raspberry mini loaves would be amazing.

These really are a great portable and healthy snack, as well as being super delicious of course.  Also, I love the novelty of a mini loaf, wrapped perfectly in their pretty parcels, so cute!
