Avocado on toast has become a firm favourite in our house. I tend to have it with scrambled eggs or a fried egg on top, runny yolks are the best! I just don’t stop at having it for breakfast either, I have been known to have it for lunch as well as it’s a quick and satisfying option and I love loading up on those healthy fats that keep me fuller for longer.
To really make avocado on toast taste even more exciting and a little different there are plenty of simple ingredients that you can throw into the mix to help. In this recipe, Fragata Stoneless Manzanilla Olives filled with piquillo peppers, that are available to buy in Morrisons really lift this simple dish. Stuffed olives that are filled with extra ingredients are such an easy way to inject more flavour into a meal.

Piquillo Pepper Olive Salsa & Smashed Avocado on Toast is an exciting way to change up a classic. If you love avocado on toast, but looking for a new and inventive way to change up one of your favorites then don't worry because this recipe has you covered.
- 2 Tins of Fragata Green Pitted Olives
- 1/2 an onion
- 1/2 Large Tomato
- 2 Garlic Cloves
- 1 tbsp Tomato Paste
- A handful of chopped walnut halves
- 3 tbsp Olive Oil
- Handful of Rosemary
- Handful of Thyme
- 1 tsp Cayenne Pepper
- 1 Whole Avocado
- 2 slices of Bread (toasted)

Add the Tomato Paste, Olive Oil and the Cayenne Pepper to a bowl and mix.

Chop all your ingredients accordingly and then add to the paste.

Add the Fragata Piquillo Pepper Olives to the mixture and mix.

Putting aside the mixture, chop then smash your avocado, Slice and toast your bread and add the spread the smashed avocado evenly. Then spreading your olive mixture on the top.

Ready to serve immediately.
