I’ve been learning about how to Be More Swiss and one way that I’ve been achieving that at home is by taking time out of my day to enjoy a summer raspberry cooler in this glorious heat wave. I’m sharing the recipe so that you can join me too!
Raspberry & Elderflower Cooler, a refreshing summer mocktail combining seasonal favourites to help you cool down in the heat. This fresh and zingy drink is a lovely non-alcoholic alternative to serve to friends and family who aren’t drinking – it looks like you’ve made lots of effort without even breaking a sweat.
Well, after our holiday and some lovely sunny day trips this summer, I’ve looked at plenty of mocktail recipes over the past few months. I’ve been venturing away from my trusty virgin mojito and exploring other tastes and flavours. Only this weekend I was taste testing a tequila sunrise minus the tequila and it was so tasty! I do love a cocktail, and thank goodness that there are some great mocktail versions out there that I can still enjoy even when I’m pregnant. To me, there is nothing better than a relaxing sunny afternoon in the garden with an ice cold drink.

We went strawberry picking a few weeks ago and I’ve been reliably informed that raspberries are slowly beginning to ripen so I’m hoping to pop back soon to grab some. This raspberry cooler really has the full flavour of the fresh berries that are mashed to produce a bright red juice that gives this drink its colour.

Sadly, I’m pretty sure that I’ve missed out elderflower season, which tends to around the end of May in the UK. Instead, I used Ricola Delicious Elderflower herbal sweets instead, that are also sugar-free. To get the taste of the elderflower from the herbal sweets I let them steep in boiling water, which I then cooled before adding to the crushed raspberries.
I was inspired to make this recipe after I was kindly invited to an event hosted by Ricola at the legendary Mosimann’s, to learn all about Swiss culture and what makes them the happiest people in the world. It was so interesting to learn how to be more Swiss and I think it’s something that British culture could definitely adopt by making small changes to their routines, like spending more time outdoors and taking time to switch off.

We took part in a Swisstification Masterclass, with experts in cuisine, etiquette and wellbeing. It was so interesting to learn how to be more Swiss and I think it’s something that British culture could definitely adopt by making small changes to their routines to help improve their lifestyle and health.
Some of my personal favourites that the experts touched on in their talks was taking time to switch off to live in the moment, which is always a work in progress for me and spending more time outdoors, which is already a passion of mine. I’m definitely on board with adopting a better work/life balance, something that the Swiss have mastered, but we tend to struggle with achieving in the UK. I was also inspired by the understated elegance of Swiss culture and their pride in taking pleasure in the small things in life and those little moments that often get overlooked.

Now all I need is to sit in the sunshine, fire up the BBQ and make one of these Raspberry & Elderflower Coolers to get into the summer spirit. If you love mocktails and looking for some alternative recipes, you can check out this post for some more ideas.

A refreshing summer raspberry and elderflower mocktail combining seasonal favourites to help you cool down in the heat and get into the summer spirit.
- 100 g fresh raspberries
- 1 box Ricola Delicious Elderflower herbal sweets
- 250 ml boiling water
- 1-2 tsp honey or maple syrup
- 1 bottle sparkling ot tonic water

Pour the Ricola Delicious Elderflower herbal sweets into a cup and fill to the top with boiling water. Allow to stand and cool down for around 20 minutes.

Mash the raspberries in a bowl and pass through a sieve to remove the seeds. Combine the juice with the cooled elderflower water and honey.

Fill 2 glasses with ice and add the raspberry mixture. Top the glasses with sparkling or tonic water.

Garnish with more raspberries, mint, and slices of lime. Drink and enjoy!

Raspberry coolers are an ideal way to feel refreshed with the hot weather. This is a great way to make them. I really like Ricola products, and love the little boxes they come in.

I love anything with elderflower. Also, riccola sweets are life. We used to stock them in Lloyds and mostly they were bought and eaten by the staff!

I love the taste of elderflower it’s not overly sweet and is very refreshing. I normally have it with blackberries but I love the sound of using raspberries instead. It’s clever to use the sweets crushed down to make the drink
