Muffins don’t have to be all about the sweet flavours they can be savoury and just as delicious too. With the festive season now ramping up and everyone thinking about Christmas gifts and all the food (the food is my favourite part about this season by the way!) this cheddar and cranberry muffin recipe is just the thing to help ease you into the Christmas groove if you’re not quite there yet.
When Alfie and I first tried these, straight out of the oven with melted butter on top for me and strawberry jam for him our first thoughts were if a muffin and a cheese scone were to have a baby then this would be it! They have a lovely crust on the outside like a traditional scone, but the inside is deliciously fluffy like a muffin. If you’re throwing any festive Christmas afternoon teas over the next few weeks then these would be a perfect addition.

- 300 g self raising flour
- 6 tbsp dried cranberries
- 4 eggs
- 100 g Wyke Farms Vintage Cheddar grated
- 3 tbsp coconut oil melted
- 375 ml almond milk

Preheat the oven to 200 degrees and line a muffin tin with muffin cases.

Pour all of the ingredients into a bowl and mix together until just combined.

Portion out the batter into the muffin cases, filling them so they are 3/4 full.

Bake in the oven for 25-30 minutes or until the muffins are golden brown on top.
They store well in the freezer for up to 3 months.
We absolutely love cheese in our household and a cheese board on Christmas Eve has become a bit of a family tradition. Anything with cheese in the ingredients is a winner right? Eating these straight out the oven with melted butter on top was such a treat. You get all that cheesy flavour with every mouthful and a pop of sweetness from the dried cranberries. These are great as a quick snack on the go and can be served hot or cold. Additionally, you can make a batch ahead of time and store them in the freezer for any unexpected guests that may pop round, which happens a lot over Christmas.

I would never of thought of mixing cranberries and cheddar but how absolutely amazing do they look I definitely need to give this a try for myself.
