Sometimes it’s the simple things in life that make you happy and this recipe loaded with melty cheese is exactly that – the perfect comfort.  These can be eaten either hot or cold, but be warned if like in my house, these cheesy delicious nuggets won’t last long!

I’m really enjoying getting creative in the kitchen and thinking out of the box when it comes to cooking low-budget meals.  Using up what we have in the house before going shopping again is a big part of this, which is how this particular recipe came about.

If you remember my fussy eater post and my struggle in getting my nearly 2-year-old to eat his vegetables, I’ve had to become one of those sneaky mums to get him to eat his greens. Being more inventive with vegetables rather than just serving them on the side of his plate has been a game changer.  And seriously, he scoffed these cheesy fritters like they were going out of fashion, which totally took me by surprise.

Ingredients
  • 1 courgette zucchini
  • 1 carrot
  • 100 g /1/2 cup cheddar cheese
  • 75 g /1 cup fine polenta or plain flour
  • 250 ml almond milk or milk of your choice
  • 1 egg
  • 1/2 tsp cayenne pepper
  • salt and pepper to taste
Instructions
  1. Grate the carrot, courgette (zucchini) into a bowl and stir in the rest of the ingredients until well combined.
  2. Heat a little oil in a frying pan on a medium heat and take tablespoon portions of the mixture and place in the frying pan. Flatten and shape with a spoon.
  3. Cook for 2-3 minutes on each side until golden brown before flipping over to cook the other side.
  4. Serve and enjoy!
What I love about this recipe how is how basic it is, but it still packs a punch in the flavour department.  You don’t even need any fancy kitchen gadgets, just a cheese grater, making it a speedy lunch and dinner option.

Since they got my little boys seal of approval, they will definitely be making it on to the meal plan again.  We tend to always have cheese, carrots and courgettes in the fridge anyway so they will be simple enough to whip up.  I think that these would also be perfect if you’re just starting out with baby led weaning too, just cut them into bite size pieces for easy handling. But of course, they’re also great for big kids like me who also couldn’t help going back for seconds and thirds.
