Kick starting your day the right way, with a nourishing and filling breakfast can really help shape a positive and productive day. It’s crazy how many people actually skip breakfast, but there are so many health benefits to eating it. Making time for a decent breakfast is a lovely way to pack more nutrition into your day, just like these stove top carrot cake oats.
Porridge is such a warming and comforting dish, probably one of my favourite breakfasts when the weather turns cold and the dark miserable mornings reappear. Just like getting a big hug from your breakfast bowl and there is no better way to start the day, especially in autumn and winter.

- 50 g /1 cup porridge oats
- 1 carrot grated
- 500 ml almond milk
- 1 tsp cinnamon
- handful of walnuts
- handful of raisins
- Drizzle of maple syrup

Put your oats into a saucepan with the milk and cook on a gentle heat for about 10 minutes.

Add the rest of the ingredients into the pan and stir together.

Cook for a further 10 minutes and serve.

Drizzle with maple syrup and sprinkle with your favourite toppings.
Like always, I like to change-up my porridge a lot with lots of different add-ins and flavours. I always try to pack as much nutrition into my meals as possible and grating vegetables and adding them into your food for a healthy boost is a great way to do this. Porridge is a great vehicle for grated vegetables and extra flavour. This carrot cake porridge recipe is my one time love during autumn, with the extra nutrition from the grated carrot, warming cinnamon spices and natural sweetness it’s just a wonderful start to my day.
Breakfast is by far my most favourite meal of the day, so I like to make sure that it lives up to my dreamy expectations. Cooking my porridge on the stove always feels like a luxury, something that I can take my time over before the madness begins. This porridge can also be made in the microwave for speed, however, for me, they’re creamier after being cooked on the hob and I prefer the texture. Anyway, who doesn’t love the idea dessert for breakfast?

It sounds lovely, but I would not want to get up even earlier to make it on the hob- I let it soak over night in the fridge and then microwave it- still goes creamy but saves the time!
Yes, you can definitely make in the microwave. Love the tip about soaking it overnight too.

Oh wow, I love my porridge and I eat loads of it (I actually often have it as part of my tea too) but I never thought of adding carrot. I’ll definitely be trying this!
I vary mine too – my most common are probably either just plain (sometimes with a bit of salt, sometimes not), with blueberries, cinnamon, ginger or stirring some soya yogurt through (usually either a plain or almond variant)
