Seriously, this is the ultimate sandwich! Why? Well, if creamy avocado mash, salty halloumi cheese and the earthy flavour from the chestnut mushrooms combined with crisp little gem lettuce and sweet tomatoes and a slathering of green pesto is your thing, then no lies this sandwich is going to fast become your favourite thing EVER!
If you hadn’t noticed yet, I freaking love this sandwich! I can’t believe that in nearly 6 years of blogging this is my first sandwich recipe. Everything about it just works for me and all the ingredients go so well together. You’re probably thinking why I’ve gone all crazy over a simple lunchtime delicacy, well, this sandwich in particular not only tastes amazing but reminds me of a special time of my life.

- 1 bread roll or panini
- 3 slices of halloumi cheese
- 2 chestnut mushrooms , sliced
- 1 large tomato
- Little gem lettuce leaves
- 1 tbsp green pesto
- Juice of half a lime
- Pinch of rock salt
- Half an avocado
- Garlic chives and purple radish (optional)

Mash the avocado in a bowl and add the lime juice and rock salt. Mix well and set aside.

Heat some oil in a pan, cook the slices of halloumi cheese on each side for 3 minutes or until golden brown and set aside.

In the same pan, sautee the sliced mushrooms until golden brown and tender.

Next assemble the sandwich using your favourite bread roll by spreading the mashed avocado on the base and layering up with lettuce, green pesto, sliced tomato, halloumi cheese, mushrooms, garlic chives and purple radish.

Eat and enjoy!
When I was asked to take part in the Just Add Mushrooms campaign to encourage people to cook with mushrooms in the summer months as they are usually used in wintery dishes this particular sandwich was the first thing that came to mind. We’d all order exactly the same sandwich with a side of sweet potato fries…oh those fries! Mushrooms are incredibly good for you, they’re a good source of vital vitamins and minerals as well as a great source of protein too.
I’ve changed up the original sandwich by adding mashed avocado with a squeeze of lime and rock salt. The pesto is something that one of my mummy friends would add for a tasty and genius twist. Also, instead of using portobello mushrooms I’ve opted for chestnut mushrooms because that’s what I had in the fridge and I just love that nutty flavour, however, any variety of mushroom would work well.

This looks like a really delicious sandwich! I love mushrooms but not only in winter, any season really. I use them in miso soup, no carbs vegetarian burger and in vegetarian pasta.
Oh wow! I just love halloumi and missed it soo much while breastfeeding Harry. This is gorgeous – exactly the sort of sandwich I love. I bet it’d be fab with Pide too.

Great minds think alike – I have a similar sandwich recipe to post. This is my favourite sandwich at the moment, as I love the saltiness of the halloumi with the avocado.
