Dark chocolate. Almond Butter. Sea salt. This recipe includes 3 of my favourite ingredients making them insanely irresistible while they sit there in the fridge!
Soft gooey salted almond butter centre with dried cranberries and coconut and coated with chocolate, seriously what’s not to love? This recipe is perfect for the health conscious and anyone who adores nut butter and chocolate together. Containing only 6 on my favourite ingredients these couldn’t be any easier or quicker to whip up.
These take any protein snack ball to the next level with their rich dark chocolate coating, the perfect healthy treat for the festive season. I’ve mixed in coconut and dried cranberries with the almond butter for a festive feel, but you could literally experiment with your favourite add-ins to make them more to your taste.

- 1 cup almond butter
- 1 scoop vanilla protein powder
- 1/4 cup dried cranberries
- 1/4 cup desiccated coconut
- pinch sea salt
- 100 g dark chocolate , melted

Put all the ingredients except the chocolate into a food processor and blend until breadcrumbs form. Add more protein powder if the mixture is looking too wet.

Roll the batter into balls and leave in the fridge for about an hour to firm up.

Melt the dark chocolate and dip in the almond butter balls into the chocolate making sure that they are covered all over.

Transfer to a sheet of greaseproof paper to allow the chocolate set and sprinkle with more dessicated coconut.

Dive in and enjoy!
These can be stored in the fridge or freezer. Personally, I think they are best served at room temperature for that melty almond butter centre.

I think the desiccated coconut is what makes these truffles extra moreish. I love the sound of salted almond I have never tried that before but it sounds good.
