Bonfire Night is my favourite autumn celebration and acts as a landmark in my calendar when I can officially start thinking about Christmas festivities. I love going to my local Bonfire Night party and enjoy the warm food and drinks, Guy Fawkes and watching the beautiful firework displays lighting up the sky. There always seems to be such a joyous and fun atmosphere at these events, which I find ironic given the history behind the 5th November.
Not only are all those wonderful slow cooker recipes perfect for a Bonfire party, but the sweet side of things are also really delicious. Unashamedly I have a massive sweet tooth and will always be the first one to look at the dessert menu in the restaurant even if my belly is about to burst at the seams. There are so many possibilities that could be served as dessert if you’re hosting a Bonfire Night party like gingerbread, homemade apple pie, cinder toffee, chilli chocolate brownies, smores and not forgetting the classic toffee apple.

- 6 Bramley apples
- 2 tsp cinnamon
- 4 tbsp water
- 3-5 tbsp Natvia (depending on your sweet tooth)
- 1 1/2 cups almond flour
- 1 egg
- 2 cups unsweetened almond milk

Preheat the oven to 190 degrees and line a baking tray with greaseproof paper.

Peel and dice the apples and add to a saucepan with the cinnamon, water and sweetener. Bring to a simmer and cook for 10-15 minutes or until the apples have broken down.

Meanwhile, mix all of the pancake ingredients together until smooth and heat a little oil in a frying pan.

Take ladle full amounts of batter and cook the pancakes. You should get 6 from this mix.

When the applesauce and pancakes are cooled, place tablespoon amount of the sauce into the centre of the pancakes and roll them up like a burrito, remembering to tuck in the ends.

Place the pancake rolls on the baking sheet and cook for 25-30 minutes or until golden brown.

Allow to cool before serving.
Toffee apples were always too sickly sweet for my taste and I was never a massive fan if I’m honest. However, the humble apple is at it’s best at this time of year so naturally I would want to create a recipe that would be perfect for Bonfire Night and a tasty substitute to the traditional toffee apple.
If you’re crazy about apples, cinnamon and pancakes then you are going to go mad over these. You can get at least 6 pancakes from this recipe so there should be plenty of leftovers if you are just making them for yourself or you can double or triple up the recipe for a party. I’ve enjoyed eating mine with a dollop of full-fat Greek yoghurt, honey and cinnamon for breakfast and dessert, but I bet they would be scrummy with some salted caramel ice cream as well…just saying!

I don’t think we have bramley apples in our stores. We always end up getting Honeycrisp – our favorite!
You could use any apple really, but perhaps reduce the amount of sugar/sweetener if using a sweet variety. π

MMmm, I love apples and caramel, although I never liked toffee apples as I hate biting hard things like that with my teeth. I love the idea of using almond flour for pancakes.
I’ve never been a fan of the toffee apple craze, far too sweet for me and tough to get into like you say. Apples and caramel, however…yum!
These look absolutely perfect, especially for a cosy Autumn evening! My grandma used to buy me these toffee apple crΓͺpes from M&S when I was younger so this flavour combination feels so nostalgic to me. I can imagine this would be a real winner of a recipe, even for people who aren’t into healthier adaptions of treats.

These look super yummy! Reminds me of a filled crepe which my cousin’s french exchange student did for us when we were kids – they were so good I didn’t even know I liked pancakes before I had them and was in love after. Filled with stewed apple and then sealed with melted dark chocolate and served with vanilla icecream – blow your mind good! π
