Did I mention that I bought a spiralizer recently? I’m obsessed with it and I know I’ve harped on about it ever since it arrived, but it’s brilliant! I prefer it far more than making vegetable ribbons with my speed peeler, there’s nothing wrong with that as I’ve done it for ages, but it just isn’t the same. No vegetable is safe in my house at the minute, if it can be spiralized then its fate is sealed.
One of the first things that I made with my spiralizer was courgetti, probably one of my favourite things to make in my new gadget. I’ve always wanted to try avocado pasta, which just sounds like heaven to me, so I experimented one lunch time and came up with this creamy avocado and feta sauce that I’m sharing with you today.

- 1 courgette
- 1/2 an avocado
- 2 tbsp of Greek yoghurt (I used full fat)
- 2 tbsp of feta cheese
- 1 tbsp chopped basil
- Juice of half a lemon
- A splash of almond milk or water
- Seasonings
- Cayenne pepper (optional)

Create the courgetti using a spiralizer or speed peeler and place on your serving plate or in a bowl.

In a blender, whizz up the avocado, Greek yoghurt, feta cheese, lemon juice, basil and seasonings until smooth.

If you are having trouble bringing the sauce together add a splash of almond milk or water to help it along.

Once the sauce is ready pour it over the courgetti and add a pinch of cayenne pepper for some heat.

I’ve made this dish a few times for lunch and dinner and it never gets old. I love stirring the avocado and feta sauce into the courgetti so every strand is coated in all its creamy deliciousness. The optional pinch of cayenne really gives it a little fiery kick!
I know you are going to really enjoy eating this!!! It couldn’t be any simpler to make and is ready in less than 10 minutes flat. If you don’t have a spiralizer, you can use a speed peeler to make courgette ribbons instead. Although after this I think you will be wanting to invest in a spiralizer too.








I’ve been toying with the idea of getting a spirlizer. I think I will as this dish looks amazing.

This looks awesome! I keep toying with the idea of buying a spirulizer but I’m just not sure my hubby or son would actually eat the veggie pasta. However, I am soooo not a pasta person and would totally prefer the veggies!
You could mix in some courgetti with some regular pasta so they are getting the best of both worlds. 🙂

Wow! Those photos alone make me hungry! I don’t have a spiralizer, but I am in to trying new things in the kitchen. Seems like it would spice up some of my traditional dishes I make.
