There are often moments during the week when I fancy a late-night treat and recently this has become a more frequent occurrence. Now I’m all for a chunk of my favourite dark chocolate, a wedge of carrot cake or ice cream to indulge my sweet cravings, but sometimes, especially if I have over-indulged and still want my sweet fix it’s nice to have something healthier on standby.
A few weeks ago I mentioned in a post that I had made some salted almond butter fudge and was going to share the recipe. Well, I’m finally getting round to sharing it now, but I’ve changed it up slightly and added in some scrummy extras. If there were two things that were just meant to go together and that’s peanut butter and chocolate, throw in some sea salt and I would pretty much say that I was knocking on heavens door.

- 5 tbsps coconut oil
- 5 tbsp smooth peanut butter
- 100 g dark chocolate
- 1-2 tbsp honey or maple syrup
- pinch of sea salt
-
Melt the coconut oil and chocolate together in a bowl in the microwave on a low heat for a few minutes. Stir together to combine.
-
Pour in the peanut butter, honey and sea salt and mix together until smooth.
-
Transfer the mixture into paper cases or a silicone mini cupcake mould.
-
Place in the freezer for at least an hour or until fully set
-
Try not to eat all of them in one go, enjoy!
These are best served straight from the freezer like they are in the pictures so that they ‘snap’ when you eat them. I managed to get twelve large Jemma-sized portions from this recipe, but if you are using smaller moulds you will yield more as the recipe makes a lot of mixture.
Peanut butter, almond butter, cashew butter, any nut butter would be perfect in these. I use almond butter way more than peanut butter these days, but I can never resist the urge to dip my spoon into a jar of PB.
Obviously, these are very unlike traditional fudge, but they do taste amazing and I prefer this healthier version compared to the sugar coma that I’ve encountered with the other variety in the past. They’re even more delicious when smeared with some extra peanut butter…naughty I know but who doesn’t like an extra helping of PB?
With only 5 ingredients these are so easy to make, I found that the hardest part was not to eat them all in one go! Check out my recipe page for some more healthy inspiration.

Oh Jemma, I am drooling over the screen here! These looks like the perfect little treat. YUM!
I am sharing on Twitter too 🙂

So glad that you liked these Katie when you made them! 🙂
my boyfriend would ADORE this! anything with salt and chocolate is his jam. mmm
A big *high 5* to your boyfriend, I love that combo too.
They look really good! Have bookmarked! x
Thanks! I hope you like them. 🙂
Delicious! I made a very very similar recipe a few months ago on my blog (here) actually. Anything salted, chocolate and peanut/almond butter-y, I’m all over! Good tip with keeping them in the freezer, not only will they hold their shape more but sometimes it prevents you from going and eating more than you should because they’re so cold!
She’s So Lucy
I just saw your recipe, love that you added some whole peanuts for some extra crunch, so yummy!
O.M.G!!! This looks absolutely amazing!!!! I just love peanut butter fudge!!!! Too yummy
Thank you, Courtney! It’s a real treat!
The peanut butter and dark chocolate along with the coconut oil makes this a power-packed chocolate snack that will satisfy one’s sugar craving, yet boost metabolism at the same time. It’s full of good protein and oils that can help keep you going for the rest of the day, and it’s going to be hard not to eat them all at once! Great recipe, thanks for sharing!
You’re very welcome. Coconut oil is one of my favourite ingredients, so nourishing for the body.
Oh my sweet goodness. I want this now. And I mean NOW.
You had better go and buy the ingredients and make them now. I mean NOW! 🙂
Looks so delicious! Fudge is amazing!

Thank you! 🙂
I love both peanut butter and almond butter – both are my friends! I have also been working on a peanut butter fudge recipe so great minds think alike Jemma – summer time just feel like the right time to eat fudge in my books:)
It really is! Especially because this fudge is kept in the freezer so it’s lovely and cool on a hot day.
Your fudge sounds awesome! I love the combination of peanut butter and chocolate.
Thank you. It’s the perfect combination isn’t it! 🙂
Oh my god. Oh my god. Oh my god.
Drooling.
Salted chocolate fudge is enough but the fact your drizzling peanut butter over these is having me in fits!
Haha, Lucie! The extra peanut butter does take it to a whole other level. 🙂
They look lovely 🙂 I have some dates stuffed with almond butter in the freezer at the mo- may have to get a couple out!
Dates and almond butter are such a great snack. I love sticking them in the freezer too, so they go all fudgy.
These look ah-may-zing! I cannot wait to try them!
Thank you! 🙂
