Everything feels so fresh and new at this time of year, I really do love it. I think that after Christmas, spring has to be my next second favourite time of the year. There are lots of cute newborn lambs and calves in the fields around us and we were lucky enough to see some beautiful foals on a walk with our friends too. It’s been a fabulous week over here, full of lots of great things. I really feel like I’m such an awesome place right now, despite some low points, I’m positive aboout some future possibilities that I’m trying to plan behind the scenes (annoyingly vague I know, but I don’t want to reveal all until everything is set in stone).
My week has been full of wonderful and delicious food like this bowl of scrummy cherry bakewell porridge with coconut oil that I topped with lots of drippy almond butter. I’m such a bakewell addicted, cherries and almonds are just something that work so well together.
An oldie but a goodie! It had been so long since I’d made toast topped with peanut butter and banana that buying a loaf of rye and wholemeal sourdough seemed like the perfect excuse to make some for breakfast, it went down a treat with my mug of green tea.
I had loads of roasted butternut squash leftover from a meal that I had made for Aiden and it’s been fantastic having it on standby to be able to throw on to things like this bowl of full-fat Greek yoghurt with a chopped apple and almond butter.
Talking of roasted butternut squash, after getting back from a lovely sunny walk with my little man this rocket, leftover roast chicken, butternut squash, red pepper & feta salad for lunch really rocked!
There was plenty of leftover mango from the green smoothie recipe that I posted earlier in the week. To use it up, I whipped up a summery salad for lunch that also included rocket, red pepper, feta and coriander, so yummy.
A tasty treat from Pret, one of their new salads that included one of my all time favourite foods, falafel.
This was nothing but perfection! Toasted rye and wholemeal sourdough, smoked salmon, avocado and runny yolks. Runny egg yolks…how I love thee.
There’s nothing like drinking a refreshing banana and almond butter green smoothie in the sunshine. It was so sunny and beautiful the other day that it would have been rude not to have drunk my afternoon snack outside in the garden.
I saw these new Fruit and Nut Nibbles on Maria’s timeline during the week and I knew that I had to try them. This salted caramel flavour really didn’t stand a chance, practically gone in 60 seconds. Too good!
This roast dinner was so well-deserved after a busy Sunday sorting out the nursery. I’d made harissa roast chicken, hassle back potatoes, broccoli, honey roasted parsnips, Yorkshire pudding and homemade gravy. This was followed by an apple crumble and vanilla custard. I spent the rest of the afternoon nursing my food baby in front of the TV, my belly was very happy.
And the award for the ‘Most Random Meal of the Week’ goes to this feta and cucumber salad with leftover chicken curry and a baked sweet potato. Something is telling me that we need to go grocery shopping asap.

Spring is my absolutely favourite season. IT’s so pretty and I feel energised after the dreariness of winter. I’ve been buying make-your-own falafel kits lately and adding falafel to my salads for lunch. So delicious!
Mmm, this post has just made me super hungry (and I’ve literally just finished my breakfast LOL). Can you believe I’ve never tried peanut butter on toast? I’ll have to try it at some point.

Oh my G! Your food look delicious! I love spring (and fall). The weather is just so perfect and crisp! It gives me more motivation to eat better too, more whole foods, especially fruits/ smoothies!

I love spring too as temperature is great for cycling and walking and it’s not too hot; not to mention all the birds singing and everything seems to be coming to life. Love it!

I love this time of year too- lighter evenings, warmer days, but not too hot.
I saw that salad in Pret and was tempted too, although had something similar the night before so went for a wrap instead.
I quite often have random meals at restaurants, choosing from the starters or little plates to make my own pick and mix dinner!
Love all the food pics, for some reason I am always interested in what other people eat!
