Making my own protein snack balls has become a bit of an obsession of mine. I love to whip up a batch at the weekend so I know that I have a healthy snack to turn to, instead of the biscuit tin during the week. I’m very much about balance, it’s the running theme of this blog so when I do have my hands in the cookie jar I know that it’s OK because I generally eat pretty well.
Snacking healthily is always something that I’ve struggled with as sometimes even the snacks that are labelled healthy are laden with additives and sugar. I’ve made a real effort to discover new healthy living brands that offer nutritious and tasty snack options and think I have a nice collection of go-to snack bars that never disappoint.
Let’s face it, buying snack bars isn’t cheap and certainly a luxury in my eyes. I really enjoy making my own snacks to mitigate the blow of buying them on my bank balance. This way I think that when I do buy myself a couple of bars from the health food shop it feels more like a treat.

- 1/2 cup cashews
- 1/4 cup shredded coconut
- 1 scoop vanilla protein powder
- 2 tbsp coconut oil
- 3 tbsp lucuma powder
- Zest and juice of 1 lemon
-
Place all of the ingredients in a food processor and blitz until a crumbly texture forms.
-
Take tablespoon portions of the mixture and roll in to balls.
-
Allow them to stand in the fridge for 30 minutes to firm up.
-
Enjoy with a cup of tea and try not to eat them all in one go!
These store really well in the fridge for at least a week - they can also be frozen.
I’m a complete coconut addict so these were really on point for me and I know that they will be for all you other coconut lovers out there too. They’re incredibly easy to make and really pack a punch in the flavour department – they taste like dessert.
Knowing that I have delicious healthy snacks on hand, homemade or shop bought means I know that I’m nourishing my body the best way I can when I’m busy or away from home. These are grain-free so will be perfect for celiacs and since they taste like dessert they go perfectly with a cup of tea for a guilt-free snack.
What are your favorite go-to snacks? Which desserts would you like to see recreated as protein snack balls?

Oh these look fantastic, I may have to come back here at the weekend to try these out. I’m currently trying to eat more healthier so my go to snacks at the moment are Apples or Nuts – depending on what mood I’m in xx
Apples and nuts is such a classic snack combo, it never gets old.
Omg these look so good! I keep seeing recipes for healthy snack bites, I may have to give this one a go though!
Thanks! They are popular, mainly because they’re so easy and cheap to make.
Oooh good thinking with the use of lucuma! I bought some a few weeks ago and now haven’t a clue why on earth I a) purchased it and b) how to use it! These sound seriously scrummy.
She’s So Lucy
Ha! I have so many ingredients in my cupboard like that too.
These sound absolutely delicious, I can imagine they would be a great mid-morning snack x
They are perfect mid-morning or anytime really.
These look fabulous! I love protein snack balls so easy and you right about saving money and making your own – we would all be bankrupt otherwise:)
Absolutely, I love buying bars but my bank balance hates me for it.
They sound delicious. I’m always tempted to make my own snacks as yes they can get so expensive to buy all the time!
You should give it a whirl Anna!
Yummy! I am loving lemon desserts now that it is coming in to Spring.
They’re so refreshing aren’t they, love them.
My mouth is watering! I have pinned this one for later! <3
Thanks for pinning Rowan.
These sound so good and not too hard to make. You’re so right the bars can get so expensive. I’ll need to try making these.
They can get super expensive if you’re buying them all the time.
Yum, they sound delicious. I’ve just made a massive batch of energy balls and bars so I’m stocked up for a few weeks!
I made a huge batch of protein balls yesterday too. I love having homemade snacks ready to go in the fridge.
Oh my gosh, I love macaroons so these sound like a much healthier option!
They’re definitely healthier and far more easier to make.
wow this looks so good ! i must try these!!
Thank you!
These look so good! x
Thank you! 🙂
mmmm these look like they would be great as a snack on the go!
They definitely would!
The lemon flavour sounds fab. I had never thought of adding fresh lemon juice to things like this until I saw Lauren do it with her matcha lemon balls.
I’ve always wanted to try making my own protein balls but I don’t have a food processor. Do you think you could do it without one?
I am all over these as I adore things made with shredded coconut.
I feel like these would have been amazing if I would have used a different protein powder. I just bought the plant based Vega protein powder and I am extremely unsatisfied with the taste of it. Next time I make these, is there something else I can sub the protein powder for?
Is it a vanilla flavour? I haven’t used that particular brand myself so not sure how it compares. The protein powder helps to soak up the oil from the cashew nuts. Perhaps something like coconut flour would work or upping the amount of coconut?
