We all have them, certain foods that we just love, once opened we can’t seem to stop the old hand to mouth movement and before you know the entire box is gone. I think I’ve mentioned on the blog many times that my addictive food is granola, I’m not sure why, but I just love it. Once the box is open it can be a matter of days before it’s finished.
My favourite way, to eat granola, is with a huge dollop of Greek yoghurt, a swirl of honey and summer berries. Hey…sometimes I even throw dining etiquette right out of the window and don’t even eat it with a spoon, nope straight out of the packet and into my mouth…go me!
Since granola is such a trigger food for me I’ve always been conscious to make my own healthier version of it and I’ve featured a couple of granola recipes on the blog such as my Cherry Bakewell Granola and others over on my recipe page. It’s incredibly easy to make that I haven’t bothered to buy a box of my favourite cereal for months because I tend to have all the basic ingredients in my store cupboard. Today I wanted to share my simple granola recipe, a healthier version made up of only 5 ingredients.

- 2 cups jumbo oats
- 250 g dried fruit and nut mix
- 1/3 cup honey
- 1/2 cup coconut oil
- 1 tsp cinnamon

Preheat the oven to 160 degrees and line a baking tray with greaseproof paper.

In a saucepan, melt together the coconut oil and honey.

Pour the melted mixture over the oats in a separate bowl and stir in, making sure that the oats are well covered.

Add the cinnamon and dried fruit and nuts and stir.

Transfer the granola on the prepared baking tray and spread it out so that it's flat.

Bake in the oven for 20 minutes, remembering to turn it over half way through.

When golden brown remove from the oven and allow to cool.

Store in an airtight container and enjoy!
You can throw in some of your favourite add-ins or flavoured extracts to create and entirely new recipe.
This very simple recipe is the basis of all of my granola recipes, to change things up I add my favourite add-ins and flavoured extracts to create a totally different recipe each time – your only limitation is your imagination as the possibilities are endless! I added dark chocolate chips into this particular batch to make it into a trail mix for a healthy treat that I could snack on.
Seriously, anyone can make this no-faff recipe and you can make it in bulk because it stores really well in air-tight containers for at least 4 weeks. Now when I start munching on my homemade granola, I know that I’m getting some nutritious goodness rather than the heaps of refined sugar and additives that are in many shop bought versions.

This is pretty much how I make my granola too. it’s one of those foods that I can just eat so much of, so I try not to make it too often.
It’s really addictive isn’t it and very easy to over indulge with.

I love how basic or complicated you can make it by adding some of your favourite ingredients.
Sometimes all I want is some simple granola! It’s definitely the kind of food I can eat by the handful though 😉 I have to try to keep my spoon out of the container!
