Finally, I’ve finally managed to get in the kitchen and bake!  Last Sunday I made a lovely beef stew in the slow cooker and whilst it was bubbling away I had the urge to bake some cookies.

Last year I had the pleasure of visiting a family who harvest and dry cinnamon whilst on holiday Sri Lanka and brought some back home with me.  The experience really made me think and appreciate the work that goes into harvesting spices as I’m too used to the convenience of buying them in jars from the supermarket.

I knew that I wanted to bake something seasonal and one of my favourite spices at this time of year is cinnamon.  It’s everything that autumn should be: warming and comforting.   My taste buds were craving the taste of autumn and it encouraged me to make some cinnamon spiked cookies.

A deliciously soft and chewy cinnamon spiked cookie recipe to celebrate Autumn.

Ingredients
  • 1 cup gluten free oats
  • 1/4 cup raisins
  • 2 small apples grated
  • 1 1/2 tsp gluten free baking powder
  • 2 tbsp cashew butter
  • 1 egg
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 cup honey
  • 1/3 cup coconut flour
Instructions
  1. Preheat the oven to 180 degrees and line a baking sheet with parchment paper.
  2. In a bowl add the oats, baking powder, cinnamon and coconut flour and stir through.
  3. Add in the egg, vanilla extract, honey, cashew butter and mix together with the dry ingredients to combine.
  4. Next add the raisins and grated apple and stir through the cookie batter until evenly distributed.
  5. Bake for 10-15 minutes to produce a soft and chewy cookie.

These cookies have that soft and chewy texture that I love because of the short baking time.  I found that 12 minutes at the given temperature worked perfectly for me.  Whilst baking, the edges go a lovely golden brown and the inside remains moist due the addition of the grated apple.

Oats always make biscuits or cookies hearty and robust, perfect for dunking in your tea. These gluten-free cookies definitely tick the hearty box that’s for sure.  I also like that they are free from refined sugar; the honey and raisins give them a wonderful natural sweetness.
