With the cold weather rapidly approaching, I’ve been in the kitchen experimenting with some healthy autumnal recipes for breakfast to kick-start the day.
I’m pretty good at getting in a portion of vegetables in with my lunch and dinner. When it comes to breakfast, unless I’m having a green smoothie packed full of dark leafy greens this is one meal that is often neglected in the vegetable department. As much as I love my green smoothies, they’re not necessarily my first port of call on a cold wet autumnal morning. Mornings like those definitely need something warmer in your belly like porridge. I’ve made carrot cake porridge a lot in the past and after looking at this recipe I was curious about how courgettes would favour with my oats.

- 1/2 cup porridge oats
- 2 cups oat milk or almond milk
- 1 tsp unsweetened cocoa powder
- 1 courgette grated
- 2 tbsp chia seeds
- 1 tbsp maple syrup
- handful of pecan nuts

In a saucepan on the hob or in a bowl in the microwave mix the oats, milk, cocoa powder, grated courgette together and cook on a low heat for 5 minutes. Stir regularly whilst cooking.

Once cooked pour into a separate bowl and sprinkle with chia seeds, pecans and drizzle with maple syrup.

Serve and enjoy!
I like my porridge to be quite wet, but I know not everyone does so you could just cut the amount of milk or increase the amount of oats in the recipe. Surprisingly, you can’t taste the courgette at all, but I think it adds a lovely texture to the oats and moisture, which I expect it would in baked chocolate courgette bread. I’ve got a bit of an addiction to pecans and maple syrup at the moment, both just sing autumn to me. What would be very autumn and take this heavenly breakfast bowl to the next level would be a pinch of cinnamon, yum!
Chocolatey bowls of porridge like this are going to get me through those cold autumn mornings and I love the bonus addition of vegetable goodness from the courgette too. Next to try is my Carrot Cake Bulgar Wheat Batter, which is another great spin on an a favourite cake but in breakfast form.

Thank you! You should really give it a go. The courgette is quite mild in flavour and you can’t taste it.
Never in my life I would have thought about adding courgettes to porridge. To be fair, I never thought courgette had much taste so I supposed that would be Ok but I’m sure it adds a lovely texture to the porridge. Need to try, surely it’s healthier than my jam toasts and hot chocolate!!

I never in a million years would have put zucchini in oatmeal, but if it turns out looking this good, I’m definitely going to give it a try! 🙂 My little one loves oatmeal, so I’ll give this to her and she won’t even know I’m sneaking in a veggie, too! 🙂

Okay, I am TOTALLY making this! I tried a chia pudding recipe a couple of weeks ago and it didn’t work out, but I think the added texture of bread will make it very much more like a pudding!

Adding chia seeds adds beneficial nutrients and doesn’t change the flavor. I love them!
I like adding pumpkin puree to porridge in the winter, but usually I have fruit at breakfast instead.
