There are some flavour combinations that just belong together: cherries and chocolate, blueberries and lemon, peanut butter and chocolate.  Well how about peanut butter, chocolate and banana bread? Seriously it works and I’m a little bit in love with it!

When my brother visited a few weekends ago now, we made a big loaf of banana bread.  My kitchen smelt divine! We couldn’t stop eating it and kept going back for more, even when it was fresh out of the oven. Luckily, our eyes weren’t too much bigger than our bellies and there was plenty left to take home with him…sharing is caring after all!

I knew that I wanted to make banana bread again at some point, but wanted something completely different from the loaf that we had made previously.  After looking at my store cupboard ingredients and researching some recipes I came up with these tasty morsels.

Ingredients
  • 1 cup wholemeal spelt flour
  • 1/2 cup ground almonds
  • 1/2 cup natural yoghurt
  • 2 over ripe mashed bananas
  • 1/3 cup peanut butter
  • 1/4 cup honey or agave nectar
  • 1/3 cup coconut butter
  • 1/3 cup milk or dark chocolate chips
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
Instructions
  1. Preheat the oven to 180 degrees and prepare a mini muffin tin.
  2. Beat together all of the wet ingredients (peanut butter, yoghurt, vanilla extract, coconut oil, mashed bananas and honey) in a mixer or by hand until well combined. Pour in the ground almonds, spelt flour, baking powder and baking soda and mix in well. Add in the chocolate chips, making sure that they are well distributed.
  3. Next portion out the batter into mini muffin trays and bake for 10-15 minutes at 180 degrees.
Recipe Notes

This recipe yields 30 mini muffins, but you can easily get 6-10 larger muffins from this muffin mix.

The best thing about these, other than being totally scrummy, is that they’re very quick to whip together and bake.  On a day when you have a sweet craving and want to bake something quickly, these are just perfect. Of course, I’ve attempted to make these as a bit healthier alternative to conventional banana bread recipes by omitting the butter and using coconut oil.  I also used wholemeal spelt flour, which give the muffins some density in their texture.  

You can really go to town with the additional ingredients too.  I would love to try some raisins and cinnamon with the peanut butter.  Even adding some cocoa powder to the batter would work, making them even more chocolatey and indulgent.

As the recipe notes suggest, if you wanted to make the batter into larger traditional muffins as opposed to these cute mini muffins, I think you can easily get 6-10 larger muffins from this mix; perfect for on-the-go breakfasts or snacks.  When they came out of the oven I taste tested a couple…or 3 or 4…ahem!  Cook’s perks and all that jazz.  I warn you now they are seriously addictive, but worth it and there’s no real effort required.  Happy Baking!
