On a cold and wet miserable morning there is nothing better than making wonderful bowl of delicious oat to warm your belly before heading out into the freezing cold. Every autumn/winter I’m always experimenting in the kitchen in trying to make this rather humble ingredient more exciting and sexy!
I prefer my oats to be of a creamy texture rather than stiff and like glue, but that’s just me. Everyone’s idea of the perfect oats is different, but I’ve been asked quite a few times how I make my oats and I have to say I think they are pretty darn good.

Most mornings I make my oats the microwave for speed and they still retain that lovely creaminess if they had been made on the hob. One of my favourite ways to eat my oats is by whipping them or blending them in a food processor so that they go super thick and creamy…whipped oats are the best!

To make my version of the perfect oats I follow the 1/2-1-1/2 method of 1/2 cup of rolled or jumbo oats, 1 cup of water and then 1/2 cup of unsweetened almond milk. I first add the water to the oats and cook in the microwave for 2 minutes and then stir. Then I add 1/2 cup of almond milk and cook for a further minute and stir until well combined and creamy. I used this method to make my Chocolate and Ginger Oats at the weekend.

- 1/2 cup rolled or jumbo oats
- 1 cup of water
- 1/2 cup of unsweetened almond milk
- 1 tsp of ginger
- 1 tsp of ginger coconut sugar
- 2 tsps . cocoa powder

First add the water to the oats and cook in the microwave for 2 minutes and then stir in the ginger, cocoa powder and coconut sugar. Add 1/2 cup of almond milk and cook for a further minute and stir until well combined and creamy.

Serve hot and go crazy with the toppings.
By the way the only major difference between rolled and jumbo oats is that jumbo oats are rolled flat are coarser than rolled oats, meaning that they need cooking for longer.
Not only can you go crazy with the toppings and the flavour combinations but you can really up the ante by adding a protein kick to your morning oats. I love my oats but I tend to prefer them cold as overnight oats even in the winter! When I do make them in the microwave I like adding a chopped banana so it goes all gooey. I also like my overnight oats with pumpkin purée, mixed spice, cinnamon and raisins.
Yum! Love the addition if pumpkin purée and cinnamon, so seasonal!
I prefer my oats a little on the thicker side, and I pretty much always make them on the stove, as for favourite toppings, right now I’m smitten with almond butter and honey, but as long as the AB is involved, I’m a happy camper.
I would live to have the time to make them on the stove more. They are just so much creamier and richer in texture.
I’m so boring with my oats. Just oats, almond milk and a bit of water. Lately I’ve been adding chia seeds but that’s as crazy as it gets! I love it that way; just pure and simple.
Simple oats are lovely too. I probably do go a bit crazy with my toppings sometimes 🙂
I love porridge for breakfast when it is cold- so warming and filling. At the moment I am having them with pear cooked in, although today I had it with figs.
I bet pear is lovely. I’ve never actually tried figs in oats. I think I would try it with maple syrup and walnuts too.
I love the sound of the ginger ones. I like my oats really stiff so use very little liquid, I hate it liquidy. I like to use pinhead oats, which I soak overnight and then cook up the next morning, they are lovely and nutty. I like to add protein powder and chia seeds to make them more filling, some berries and some nut butter to top them off.
I’ve never actually head of pinhead oats, they sound interesting!
