Hey hey lovely people and happy Friday! So we have made it through another week. I’m so happy that we have can extended weekend upon us in the UK, meaning more weekend full for all. We had some sad news during the week so I’m glad that it’s drawing to a close.

The nights are drawing in and the air has felt a little more crisper lately. One of my staple foods in the cooler months is warm oats. Ahhh…it has been so long! I had almost forgotten how much I loved these bad boys.

One morning this week I made some super creamy vanilla eggy oats. I made the oats as per in the microwave with water, unsweetened almond milk and a dash of vanilla extract. When the oats were nearly cooked I whisked in a whole egg and put them back in the microwave for a few minutes to cook the egg. These are seriously incredible and I love that you get a protein hit from the egg. I beg you to try these, you won’t regret it!

It has been smoothie mad around these parts this week. I’ve had one for breakfast everyday, mainly because they are quick to make and I can drink them on the go.

This banana and strawberry smoothie made with coconut water was incredible, yum!

Also, this simple green smoothie with a cinnamon and raisin bagel topped with almond butter and strawberries was like a eating a piece of heaven.

I love me some sushi and luckily so do my work colleagues as we ended up in the Hare and Tortoise for our team lunch yesterday.

The salmon hand roll was so pretty, it was a shame to eat it but it went down a treat. I love our work lunches I always know that there will be scrumptious food and equally good company.

I’ve also been enjoying fresh strawberries with these organic superfood clusters by Joules for dessert:

The superfood clusters came in my Nutribox this month and Iโ€™m a big fan already.ย  Dates, linseed, almonds and pistachios enveloped in 74% dark chocolateโ€ฆhell yeah!

Despite their being reports of a heat wave this weekend it has felt a little cooler, especially in the evenings. Ideally hope that summer isn’t ready to say goodbye yet, but Iโ€™m quite looking forward to stuffing my face with roasted kabocha again.
