Super fudgy and chocolate goodness are the words that come to mind where brownies are concerned. For me brownies are the ultimate chocolate dessert and the best thing is that they are so darn easy to make!
After lots of experimentation I think I have come up with a healthier brownie recipe that is packed full of protein, chocolate decadence and still retains that fudgy texture that is characteristic of a good brownie. Plus, the addition of Brazil nuts for some extra fats makes these even more decadent.
- 2 scoops of chocolate protein powder
- 2 tbsps. of unsweetened cocoa powder
- 50-100g of dark chocolate (I used 72% cocoa solids)
- 75g of whole brazil nuts
- 3 eggs
- 1 tsp. of vanila extract
- 1/2 cup of almond milk
- 1 tsp of baking soda
- Preheat the oven at 180 degrees and prepare a brownie tin for baking.
- Measure out the protein powder, cocoa powder and baking powder and place in a bowl.
- Mix in the eggs, vanilla extract and almond milk and stir until well combined. Break up the dark chocolate into small pieces and add with the Brazil nuts to the brownie batter.
- Stir well before pouring into a prepared tin and bake for 15 minutes until cooked.
The amount of dark chocolate that is added is variable as it really is subjective as to how chocolaty you like your brownies. To keep these healthy just use less chocolate. I used protein powder that is already sweetened with stevia. You can always add your favourite sweetener if your protein powder is not already sweetened

I could actually eat these in one full mouthful, but to save me from myself I portioned them up quite small. They are rather rich and for me one small square is enough to get my chocolate hit. Also, they are fabulous warm as you the middle goes all gooey and oozy…perfect with ice cream or Greek yoghurt.

Brownies are fab as they are so easy to make, and of course delicious, and versatile (I love adding dried cherries to the mix).
I have never found a protein powder that I liked, so I have given up now as they are expensive too! But I suppose I could try this using peanut flour? That would give more protein than regular flour and might enhance the nutty taste too?
Surprisingly I don’t like the protein powder I used in these brownies anymore, but it’s great for baking and tastes fab!

It should be of a dropping consistency. If you add 2 scoops of protien powder? If its still too thin just add more powder.
Do i need to use the brazil nuts? or can i totally take it out.

Hello, it should be fine without the brazil nuts that was just for a bit more texture. Just checked and my protein powder measures out 60 mls.

ok no luck 🙁 i used baking soda as the recipe said soda, not sure if it is b.c i used that instead of powder but they were not good. maybe after they cool they will be better. we’ll see. thanks anyway, i really have no luck with healthy brownies.

Gave this a shot tonight to use up some chocolate whey which I can’t bear to drink anymore; have to admit I was skeptical how good brownies made without sugar or flour could be, but these turned out really good!
I’m not a big fan of Brazil nuts so I used Greek currants instead, and I was a numptie and forgot to add the vanilla extract even though I especially went out and bought some for this! I still have plenty of whey to use up though, so I’ll make sure to add it next time. Thanks for the recipe! =)
